We use pocket nappies with a microfibre insert and a bamboo insert. I have not had any issues with them smelling before but have noticed that the microfibre insert and the covers are a bit stinky even after washing, the bamboo is fine. Have had a look back through posts and figure the best thing to do is the baking soda and vinager wash thing, but can I do this to my covers given they are PUL and it may damage them, or will just doing it once not be a problem? Bit of confusing info around! If anyone can tell me what they do would be much appreciated.

i do it with my pockets. like you say its not all the time.

I have only stripped my pockets once (because I was using the wrong stuff to wash them) and they came out all fluffy, soft and lovely smelling.
I haven't needed to strip them again since changing from laundry powder to liquid.
You can do it now and then, just not too often.

Very interesting you mention this-all our microfibre nappies (fuzzibunz & nudey rudey) are a bit smelly, but our ittis (which are bamboo) are not at all smelly.

Is this a property of bamboo vs microfibre?

Yes I was reading somewhere that because bamboo is a natural fibre it won't smell but man made fibres will get smelly. Also why you should not strip the bamboo as it will eat into the fibres, but then if it is not smelly then you won't need to anyway!
