Crusted honey mustard chicken

1 spray cooking oil
2/3 c lite honey mustard dressing
1/8 tsp salt + pepper
2 tsp dill (chopped if you have)
Spring onions (finely chopped about 1 stalk)
1 c corn flake crumbs
skinless chicken (4 oz pieces)
Preheat oven to 425°F. Coat a shallow pan with cooking spray.

In a small bowl, combine honey mustard dressing, salt, pepper, dill and spring onions remove 1/3 cup and set aside.

Place cornflake crumbs in a shallow bowl. Dip chicken into dressing mixture and then cornflake crumbs; place in prepared pan.

Bake until chicken is golden and no longer pink in center, about 40 minutes.

Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve. Yields 1 piece of chicken and about 1 1/3 tablespoons of dressing per serving.

Points per serve - 7, serves 4, cooking time 40ish minutes

Hmmm Hannibal that sounds nice. I wonder how many points it would be if i changed chic bacon to a chic breast and some lite sour cream and a hamburger bun instead of bagel....... and maybe swap the WW spread for avo.........probably really fattening now........LOL

This is a great thread to start.........I think i might try and convert some of the yummy recipes that i see in thats life and lucky break and make them WW friendly cos they really quick and easy

Ive got a WW recipe book too should dig it out

Sundried Tomato and Caper Meatloaf

400g extra lean beef mince (10.5 points)
2 slices wholegrain bread (2.5 points)
1 egg (1.5 points)
50g sundried tomatoes (not in oil) (1.5 points)
1 onion
1 Tablespoon capers
1-2 cloves garlic
Salt & pepper

Boil the jug and cover the sundried tomatoes with water. Leave to soak for 5-10 mins.
Place bread in a food processor and process into crumbs. Place in a large bowl.
Grate the onion and finely chop the capers and sundried tomatoes (I'm lazy so I just chop these in the food processor instead). Place in the bowl with the breadcrumbs. Add garlic (crushed - I just use 1/2 teaspoon out of a jar), lightly beaten egg, mince, and a bit of salt and pepper.

Mix all ingredients with your wet hands until combined. Place in an oven dish you've sprayed with cooking spray (I use a little loaf shaped lasagne dish) - the recipe says to line the container with greaseproof paper but I haven't needed to.

Bake for 30 mins at 180 °C

Serves 4 (4 points each).

I use goat mince instead which is only 7 points for 400g so it's a bit lower in points but not everyone has access to goat.

Warning - it's possibly too strongly flavoured for the little ones. I wouldn't make it for my niece and nephew who are 4 and 6 (or for the one who's not yet 2 for that matter). Keeps well in the fridge overnight in a sealed container. DH likes it best served with tomato sauce

Creamy lemon tart

100g gingernuts
25g butter
405g lite sweetened condensed milk
1 egg
2 medium lemons

Place biscuits in food processor (or crush in plastic bag). Melt butter and mix into biscuits. Press biscuit mixture into a 23cm dish and place in fridge until needed.

Place condensed milk and egg in bowl. Beat until smooth, add the lemon juice and stir well. The mixture will begin to thicken. Pour into prepared base.

Bake for 20 minutes, then remove and allow to cool. Refrigerate until set.

Will keep in fridge for 1 week in an airtight container.

Points 3 | Prep Time 15 minutes | Cooking Time 20 minutes | Servings 10

I have just made this and its Devine!!! next time though I would probably line my dish with baking paper!
