How exciting! It sounded like it was the way to go. I hear you on the packing, we had two weeks to put our house on the market and then once the sale was confirmed we had a month to do the final packing. I tried to pack at least a box every day, and towards the end I calculated exactly how many meals were in the freezer and pantry etc. A packed lunch on moving day helps too.
When we packed, I clearly labelled all the boxes and then used coloured stickers to mark where the boxes were to go (yellow=bedrooms, blue=lounge, orange=kitchen, green=study). I also packed stuff we didn't use much in together, and stuff we would want in the first week all together also. It was a huge help for unpacking.
