This is a great recipe in summer or winter, with salad or cooked veges or just on its own. Freezes pretty well too. I've taken the recipe off the back of the packet but substituted some easier/cheaper ingredients instead of what they suggest, so it's pretty easy and I take no credit for it!
You'll need:
1 pack of San Remo instant Cannelloni tubes (dried pasta tubes usually in a red box in the pasta/rice section of the supermarket)
375g of spinach (I just use 1 pack of the Watties free flow frozen spinach)
350g of ricotta (I substitute one container of cream cheese, sometimes one and a half if I have one I want to use up)
2 egg yolks
2 crushed garlic cloves
1/3 cup of grated cheese
Some nutmeg and salt
Put all of thd ingredients (except for the cannelloni tubes) into a bowl and mix well. Fill the cannelloni tubes with the mixture - I find it easy just to make sure I have clean hands and do it by hand.
Pour about a third of a can or jar of tomato pasta sauce (whatever you want to use) into the bottom of a oven proof dish. Place the filled cannelloni tubes into the dish in a single layer and cover with the rest of the pasta sauce. Sprinkle some more grated cheese on top. Bake at 200 degrees C for 30-35 minutes. Test with a skewer to see if cooked.
Serve with a salad and garlic bread, or cooked veges, or just on its own. Freezes pretty well for a fast and yummy meal.

Hmmm...dunno. I like the smooth creamy texture of the cream cheese and don't know if cottage cheese would quite do it. It also might be a bit wet - the cream cheese really sticks it all together. Might not be bad tho - if you try it let us know how it goes!

I make this with cottage cheese instead of riccotta and it works fine and is high in protein, i also add a bit of nutmeg to the spinach / cottage cheese mixture. Then when I put the tubes on top of the pasta sauce sometimes i spread a bit of cream cheese or philiadelphia ontop of the tubes then coat in pasta sauce & top with grated cheese... soooo good!

I make this often and even DH who neeeeeeeds meat at every meal loves it! I do tend to fry up a piece of bacon and cut it into little pieces to sprinkle over it for him though :)
