I'm planning to set Alex up in his high chair with some paper and some finger paints tomorrow to make a fathers day present for Daddy.

We've never finger painted in this house before, so I don't really know where to start!

Does it matter which paints I buy, so long as they're water-based? Are some toxic, and if so how do I tell?

When it comes to the actual painting, do I put paint on his hands or do I put blobs of it on the paper and make him smoosh it around?

What's my best method going to be here?!

Some are toxic, most aren't and say 'non toxic' on the label. You can get washable acrylics that come out of clothes beautifully (blue and black don't wash out as well though). Don't have him within reach of the wall, and you'll be right. HAVE FUN!! Painting with kids is so cool!

...oh, and if he's painting on a canvas, the paint goes on smoother and looks better if you prime it by putting a coat of a base colour all over, and letting that dry before he gets his wee paws on it.

You could always put the paint on the highchair tray, get Alex to make patterns with both hands (a great sensory/tactile activity for him) and then make a print with the paper by pressing it on top of the paint. Looks really cool if you mix 2 colours together too.
Good luck...I'm sure your DH will love whatever Alex makes for him!

My mum used to make finger paint out of Lux Flakes...
Put equal quantities of lux flakes and boiling water (start with say 1/2 cup each) into a bowl or ice-cream container. Beat it until it rises and then falls (only takes a minute with electric beaters), divide it into portions and add a few drops of finger colouring. Washes off clothes (and tables) pretty easily - since it is soap - and the colours are pastels so they won't stain anything. You still wouldn't want him over carpet though

Depending on how "boyish" he is you will probably have to get your hands in and show him what to do with it - so I found with DD1 much to my dislike!!!
