mmmmm me too! when i make one, i go all out in a huge roasting dish and then cut it into portions and freeze half of it for DPs lunches.
i get one kilo of bacon, 2 dozen eggs, 4 onions, garlic, cheese and 2 packs of puff pastry. i chop up the onions and bacon and fry them until they're nice and browned then i add the chopped garlic and fry briefly. i then line the dish with the pastry and put in about half the bacon and onion mixture and grate some cheese on top of it. then i break in the eggs and prick the yolks so they sort of run into each other but not too much. then i put in the rest of the bacon and onion and some more cheese and cover with pastry. seal the edges and prick some holes in the pastry with a fork for the steam to escape.
i don't cook it from a recipe so i don't know how long to put it in the oven for but i usually put it in at about 170'C until the pastry is nice and golden and then i prick it to make sure all the egg is cooked inside.
another thing you can do if you want it to go further is grate some potato in between the layers to bulk it out a bit but that doesn't freeze so well.
ETA you can also add some mixed veges to make it a wee bit healthier but i'm not allowed, DP put his foot down lol, no messing with his pie!

Do you have an edmonds cookbook. Last night I made the family chicken pie in there. But instead of the bacon I put in a medium chopped up and cooked carrot and the same with a kumara. It was devine.
Bacon and egg pie is the best. For mine I just use an oven dish. Layer of pastry on the bottom, sprinkle over half a chopped up onion about 4 rashes of bacon chopped, salt and pepper bit of galic salt and crack about 6 eggs over the top burst there yolks sprinkle over some grated cheese top layer of pastry and chuck it in the oven.
I need a good steak pie reciepe too.

I have a really easy chicken pie recipe (stolen from the 4 ingredients cook book).
Basically what I do is:
1 to 1 and a half cups cooked diced chicken
1 can condensed chicken soup (I use Campbells)
couple of handfuls of your fav winter vegies (I just use brocolli and corgettes)
2 sheets of flaky pie pastry
I also like to chuck in some unsalted cashew nuts from time to time, and use a beaten egg to make the pastry go golden.
You pretty much just chuck all the ingredients (bar the pastry) into a bowl, mix. Spoon over the first layer of pastry, top with final layer of pastry and brush egg on top.
Bake on 180 for approx 45 mins (or just when pies brown).
Really yummy, and excellent next day. I always double recipe for two pies as these go down really well in our house.

I make a big batch of steak casserole - steak, mushrooms, courgette, etc etc and then thicken it quite a bit, then encase in pastry. Freezes well (I make them in the foil pie dishes, nice and easy). Oh, I usually put grated cheese in too, not too much though, just under the top crust.
