I'd love to use couscous more but I don't really know how to make it taste yummy. The only way I know how to do it is cook it in stock. DH finds vege stock boring so I need some recipes..

They need to be vego friendly though

You can get the flavoured ones, we did and they were nice.

I did couscous the other day and cooked it in just water and sprinkled over garlic and herb salt - Andrew loved it if that helps.

I was a puree feeder, forward facing, cot sleeping, pram pushing kind of Mum... and my kids survived!

Add some orange juice (for memory I think I used Just Juice) and some nuts and raisins.

I also love roasting up little cubes of pototo, kumara, pumpkin, carrot, courgettes, onions - almost anything. Boil couscous add the butter and stir thru the roasted veges - could serve with a bit of aioli as a dressing it is just yummy and its nice eating cold for lunch the next day.

i dont even boil mine, just put it in a bowl pour over boiling water and let it sit and absorb... i add moroccan seasoning to mine and a bit of butter. the kids love it!

I do a mix of hannibals & bizzys - I roast capsicum, eggplant, courgettes, mushrooms, onions sprinkled with that moroccan seasoning & olive oil, then mix them all into the couscous with some chopped parsely, orange zest & a bit more moroccan seasoning.

I make my couscous according to the instructions on the packet. Then put this on top:

Mix up 5 tbsp olive oil, 1 tbsp balsamic vinegar and 1 tbsp sweet soy sauce (can use normal). Toss some shallots or small onions and two chillies (I just use a small amount of that ready chopped chill that you can get) in the oil mix and tip into a shallow roasting dish, also add some cubed butternut pumpkin and roast till all cooked, stirring at least once. Remove from oven and stir in some chopped thyme and allow to cool a little.

Chop some parsly and garlic together and mix wtih some chopped walnuts. Stir into veges. Pile on top of the couscous and crumble on some feta.

It is so yum and you can easily play with the ingredients to suit your tastes.

I do a recipe where you cook the couscous, fry leek add couscous and pat into the fry pan until browned - invert onto a plate and then back into the pan to brown the other side. Serve cut into wedges.

Jamie Oliver has a couple of recipes for couscous salads in some of his earlier books. Can't quite remember the details but I think they were based on char-grilled veges (capsicum, courgette, etc) mixed through soaked couscous and dressed with lemon juice, olive oil and maybe chilli?
