Hi Ladies,

My son's first birthday is coming up and to help ease the workload I was thinking of baking some muffins (and anything else I can think of) pre birthday and freezing them. Has anyone done this before with good results. I'm also going to use themed cup cakes that are made of paper and wonder if they will go soggy once thawed out. Any comments?

I make cupcakes and biscuits all the time and freeze them but never in the paper molds. Maybe you could put them in the paper cups once they've thawed out?

Yeah I often try and get a mix of things that I can pre-make and freeze or things that are really easy to do on the day like sausage rolls, cheerios etc.
Use plain paper cups when you bake them and then sit them in the themed ones once they thaw out.
Pikelets freeze well and so do some biscuits

Also if you are baking the cake yourself then make it the week before, cut it t shape and then freeze it. Then all you have to do is ice it the day before
