My nearly 14 yo DS has asked for mud cake for his birthday cake, does anyone have a tried and true recipe please?

I do

Chocolate Mud Cake...

Preheat Oven to 160 - 180deg. Prepare baking tin.

Mix the following together in a bowl -
1 & 3/4 Cups Plain Flour
2 Cups Sugar
3/4 Cup Cocoa
1 & 1/2 tsp Baking Powder
1 & 1/2 tsp Baking Soda
1/2 tsp Salt

In a separate large bowl mix together -
3 Eggs
1 Cup Milk
1/2 Cup Oil
2 tbsp Rum (I have never added this but this can be a wedding cake recipe so I guess that's when you'd add it )

Add the Flour mixture & using an electric beater beat on medium speed for 2 mins. Add 1 Cup Boiling Water & beat (CAREFULLY, very runny!) until just combined.

Pour into prepared baking tin (2cms from the top, if to much mixture use the rest for muffins!), drop tin a few times onto the bench to get air bubbles out.
Bake for 1 - 1/2hrs.

** If the middle of the cake sinks while cooking turn oven up slightly, if it rises to far turn the oven down slightly
