I have been nominated to make a pasta salad for Christmas day so am on the look out for a yummy recipe.

Anyone got any that want to share?

Oh mine is yummy and totally easy

Just mix together the following:
1 or 2 chopped capsicums (red/orange/yellow - not green)
1/2 cup roasted unsalted peanuts
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup soy sauce
1/4 cup sugar
1/4 cup oil
1 tsp garlic
1 tsp ginger

Then throw in 1 pack of large coloured spirals (cooked) and your done. You can increase the amount of peanuts/seeds if you like them.

Shove in the fridge, make it the day/night before and just turn it a couple of times. tastes best cold.

I make a greek-style one:

olives, feta, cherry tomatoes, basil leaves, pasta.

sweet and sour pasta salad

2c (dry amount) of shell pasta or similar shape
            (I use 1/2 a bag then double the sauce amounts)
2 tomatoes
1 chopped onion (can pre-soften in microwave if don't like it crunchy)
1 small green pepper diced (optional)
1 cucumber diced (optional)

Chop veges into small cubes, mix with cooked pasta

Sauce:
1/3c sugar (or slightly less to taste)
1/4c oil (or slightly less)
1/3c tomato sauce
1/4c wine vinegar
1t paprika
Salt & pepper to taste

Mix together and heat for a few seconds to dissolve sugar.
Pour over veges and pasta
Stir and serve
(can be hot or cold)

I also do a greek one, i stir through pesto to cooked cooled pasta, add feta, black olives and cherry tomaotes. Just so yum! super easy. can add chopped salami if you want.
