Topic: dairy, egg free recipes Posted: 20 October 2006 at 12:48pm |
Hi ladies.
Jake's birthday party is next week at playcentre and I'm making a cake - only thing is one of the little girls there has an allergy to egg, dairy, fish and nuts. I want to make her something little - like cupcakes or something, so she can have something special too. seems a bit mean "here's cake for you, and you, oh, not for you - have a carrot"
so, any recipes? would look on the net, but not sure if they are nice or not, so anything that you would recommend?

i'll ask my friend. Usually you substide the egg for more milk but you even can't do that. What about asking her mum if she has a recipe for you to use. If not then she may have to go without.

Food for littlies that have dairy, egg, soy, peanut, wheat and gluten intolerances.
- Pascal Jellybeans and marshmallows are safe
- Chocolate Ricebubbles - they are made with kremelta (coconut oil) the recipe is on the packet and they always go down well with adults and children!
- plain rice crackers with hummus or an avocado dip (avocado, garlic, lemon juice and salt)
- ready salted potato chips
- jelly - I think greggs raspberry jellies are 'safe'. also you can freeze jelly in and ice block container and they make wonderful iceblocks that don't drip
- Kinnerton chocolate (available at Woolworths)
- Hellers continental frankfurters - cut into 'cheerio' size
- dried fruit - raisins, pineapple, mango, apricots
Chocolate Cake
185 g margarine
3/4 C castor sugar
3 tsp orgran egg replacer
6 Tbsp water
1/2 C arrowroot
1/2 C cornflour
3/4 C Rice flour
1/2 C Cocoa
2 tsp baking powder
1/2 c Rice Milk
1. Cream marg and sugar
2/ Mix egg replacer and water together and add to sugar mixture
3. Mix dry ingredients together, then add to above with milk
4. Bake at 180C for about 40 mins
5. leave in tin to cool
Angel Cakes
3 Tbsp lemonade jelly crystals
3 Tbsp gelatine
1˝ cups boiling water
3 cups sugar
"Safe" coconut or icing sugar for coating
Put jelly crystals, gelatine and boiling water into a bowl and stir until dissolved.
Add one cup of sugar at a time and stir until dissolved. (You can also do this in a pot on a gentle heat until all ingredients have dissolved.)
Leave to cool out of the fridge, but do not let set.
Beat with electric beater until thick and creamy. The stronger your beater, the thicker the marshmallow will be.
Pour into a swiss roll tin lined with baking paper.
Place in the fridge to set - about 5 hours.
Sprinkle top with coconut or icing sugar and turn onto a board with coconut on.
Cut into squares and store in or out of fridge
I stole these from another forum!
Good luck!

What about those chocolate rice bubble cakes? Not an actual cake, sorry, but a treat?!
Aren't they just made with Kremelta which is a vege fat? And cocoa and rice bubbles? (been a while since I made them). I think the recipe's on the Kremelta packs.

I tried making some egg free cupcakes when it was Ella's bday for a little boy at playgroup. Boy, did those fail! Ended up throwing the whole lot away.. I'd ask her mum if you can contact her, she is bound to have some recipes.

I know if it were me and Ella was the one with the allergy, I probably wouldn't give her any baking if she had that many allergies.. unless I had made it.. not saying I wouldn't trust people but some foods have traces of all sorts of things.

I was going to ring her mum, but she's just had a wee boy and I would hate to wake them up considering he's not seleeping well yet. they may not even come next week - but I love the jelly idea and may make her (or maybe everyone) wee jellies. thanks everyone!

I was 9amd still am) the poor egg free kid at all birthday parties.... kinda sucked. i just hooked into the lollies and developed a healthy love of chips, lollies and sausage rolls...
You can but a powder egg substitute, i think it is in a yellow box, but I have never tried it.
Hey, I also agree with Kat about the fact that the mum probably won't let her have any baking, because (and I still get this) some people think yu are just being fussy, and will "fudge" the ingredients if asked...

The powdered egg sub is called Orgran and it's relatively cheap, only about $5 a box. It substitutes well into recipes that are supposed to have egg. And you can sub milk with rice or soy without too much drama, it's when you try to sub flour for gluten free that you have problems.
I do have some recipes but right atm I lack the capacity to find them. Will endeavour to PM them to you later on.

Sweet as Emma - i think i will stick to the jelly. My friend may "trust" my baking but not trust the ingrediants - as sometimes the strangest thiongs can sneak into stuff - if you read wine, it says it may contain milk and/or fish?????/ So the jellies may be the most trustworthy!
