	easiest banana muffins are to make a banana cake recipe up and make muffins instead and for a little something special sprinkle some brown or castor sugar on top. takes about 15mins to cook as muffins.

	Oh I do!!! So simple and perfect everytime! 2 cups s/r flour 1/2 cup caster sugar 2-3 mashed bananas 125gr butter, melted 2/3 cup of milk 1 egg, beaten Sift flour, stir in sugar and banana. Blend together butter, milk and egg. Make a well in flour and add. Lightly mix. Spoon into greased muffin trays. Bake in a hot oven, 200, for 20 minutes or until golden brown. These make yummy pop-in-your-mouth mini muffins too!
