Topic: Baking! Muffins, cakes, biscuits Posted: 09 March 2010 at 4:13pm |
Ok, fail proof recipes? I'm not the best baker, and every time I google for a recipe, it seems to flop big time!
Or even ideas for flavours of muffins? I'm wanting to freeze some muffins for when baby comes, but also need to start making some stuff for DH's lunches!
So slices? what flavours? recipes if you've got them
Muffins? Cakes? Biscuits? what else can I make for his lunches or to freeze?

A hit in my house is Cocoa cake & my spin off banana cake.
Banana Cake
3 cups flour
1 Tbsp baking powder
2 cups sugar (probably could use less sugar cause of bananas)
1 tsp baking soda
3 ripe bananas
½ cup cooking oil (Sunfield Salad oil is nice)
1 1/2 cups water
1. Sift dry ingredients through twice.
2. Add liquids and mix well.
3. Bake at 170°C in a 20-22 cm round greased tin for 55 minutes or until skewer comes out clean. I find this does one standard ring tin & the left over in one loaf tin.
Variations:
36 mini muffins (bake for 10-15 minutes)
18 standard muffins (bake for 20 minutes)
Chocolate Cake (Alias "Cocoa Cake")
3 cups flour
1 Tbsp baking powder
6 Tbsp cocoa
2 cups sugar
1 tsp baking soda
½ cup cooking oil
2 cups water
1. Sift dry ingredients through twice.
2. Add liquids and mix well.
3. Bake at 170°C in a 20-22 cm round greased tin for 55 minutes or until skewer comes out clean. I find this does one standard ring tin & the left over in one loaf tin.
Variations:
36 mini muffins (bake for 10-15 minutes)
18 standard muffins (bake for 20 minutes)
These keep really well in the cupboard all week. We don't bother icing them, if I take one out somewhere I dust it with icing sugar instead. You have to sift twice otherwise they don't work as well. Any chocolate cake you buy after eating this one will be inferior DH LOVES them for work.

I have Alison Holsts Muffins and Slices recipe book, everything I've ever made from it has been a success no failures. I recommend it, most librarys would have a copy

For some unknown reason I can't seem to make a decent muffin, so have been resorting to making banana cake in muffin tins. They always come out perfectly and everyone in our house loves them - especially iced with chocolate icing
There is a yummy slice called Chinese Chew that my Mum used to make when i was a kid. It is in the older Edmonds books. Full of fruit and oats and very yum!! Will see if I can dig out the recipe if anybody wants it I still make this at least once a fortnight in our house.
I second the Cocoa cake recipe that AandC's mum posted. Fantastic recipe especially if you have kids with allergies and it makes tons of muffins! You can also take out the cocoa and add in banana to make a pretty good banana muffin

Or you can leave in some cocoa & Have chocolate banana cake too
I have changed the recipes & eliminated the vinegar, doesn't need a preservative & the vanilla cause it didn't need it either.

Alot of the baking recipes that are on Good Morning are great, I really like the Chewy Muesli Slice and there was a Chocolate Cupcake made by Tamara Jane last Easter but I can't find the link.
I am going to try the Gingerbread loaf as well

Here you go
Chinese Chew
2 Eggs
1 Cup brown sugar
75 grams melted butter
1 tsp vanilla
1 1/2 cups plain flour
1 tsp baking powder
pinch salt
1/2 cup rolled oats
2 cups dried fruit & nuts - (I vary but normally just use sultanas, raisins and dried apricot)
Beat eggs and sugar until well mixed. Add butter and vanilla. Into a large bowl sift flour, baking powder and salt. Stir in rolled oats. Pour egg mixture into the dry ingredients. Add fruit/nuts and mix well.
Spread mixture into a lightly greased square cake or slice tin. Bake at 180 for 30-35 min, cut into squares while still hot.
Also nice with chocolate chips sprinkled through :*:]
