I cheat, I use packet cheese sauce and a jar of Dolmio sauce. Fry off the mince, add some chopped capsicum, onion and mushroom, add the dolmio plus one can of chopped tomatoes and a few dried herbs (basil and oregano), make up the cheese sauce as per packet directions (I usually use two packets) the layer it all with the lasagne sheets, whack on a bit of grated cheese and throw it in the oven.
Cheating but yummy!
Oh and the other day I made the Spinach and Ricotta mixture from the cannelloni recipe that Mazzy posted but turned it into lasagne instead of cannelloni and it was yummy.

Cook off Mince, onion, mushroom whatever veg you want, drain as much excess water and fat as you can.
Add a tin of pasta savuce or tinned flavoured tomatoes
Layer mince, cheese sauce (homemade is best but packet still works) lasagne sheets (I use non cook ones) and continue untill it is just mince on the top then pour over cheese sauce, a tub of natural unsweetened yogurt and load up with cheese and bake till top is golden.
Easy and YUMMY

ooh and whatever you do it is REALLY important you drain off as MUCH liquid as you can and don't evercook the mince, brown it till it is just brown otherwise. Too much liquid makes it taste REALLY fatty and bland and too much cooking makes it bland also. It finishes off cooking when you are browing it off in the oven.

we always top ours with a mixture of cottage cheese (250g) and cream cheese (1/2 a tub so about 125g) + herbs + a bit of grated cheese on top but we don't put cheese sauce in the layers.

Brown mince, onions, etc. Use the Maggi Lasagne or Spag Bol packet with a can of tomato puree.
Cause I'm super lazy I don't use lasagne sheets but instead mix cooked pasta spirals with the mince then top with cheese sauce and grated cheese.
Leannie - do you use cottage cheese & cream cheese instead of a cheese sauce?
Fattartsrock - do you put the yoghurt on top of the cheese sauce and then grated cheese? Never heard of doing that before - sounds interesting. Have to agree about the homemade cheese sauce.

Yep, gives the taste a bit of tang. Everyone I give "my lasagne" to eat always asks for the recipie and can't believe how blimmen easy it is, and kids love it as well...

I love lasagne and I love cheese sauce, mmm cheese sauce!
I've got a really famous (in my own little circle of friends) potato bake as well. Cook potatoes until tender, slice them and put in roasting dish. Cover with cheese sauce, coarse breadcrumbs and grated cheese and bake until the top's browned. It's my staple dish that I make when we're camping with friends and the kids beg me to make it. I've also added bacon and onions to it - yum!

Ooohh Ellen your potato bake recipe sounds really good! I'll have to try it sometime.
Do you have it on it's own as a dish or have a side salad ... with it?
For my lasagne recipe I do the following:-
Chop up an onion, carrot, spring onions and pan fry. Then add the mince, and towards the end put in a small jar of dolmio, can also add a tin of chopped tomatoes. I also add some herbs (dry mixed herbs generally), some soy sauce and I also add a few tablespoons of brown sugar.
The dolmio, brown sugar and soy sauce combination should bring the sauce to a good thickness, although if a bit watery, drain off any excess liquid.
Cook lasagne sheets until al dente with a bit of salt and oil in the water. Drain off when cooked.
Use a cheese sauce packet for the sauce.
Layer the lasagne dish with a few layers of lasagne sheets on the bottom, and pour some cheese sauce over it. Next layer the mince mixture, then follow with lasagne sheets, cheese sauce etc... until lasagne sheets is the last layer and top with grated cheese.
Bake in the oven until cheese is melted and golden/crunchy.

Two Shoes - the potato bake is one of my comfort foods in winter. I usually serve it along with meat & veg cause I've got a house ful of males but I'd quite happily eat it by itself (especially if I've put onion and bacon it it). It's also a really easy thing to take to pot luck dinners or bbqs.

Thats what i do as well, i use pasta spirals instead of sheets haha, i use the maggi cheese sauce as well and then grated cheese. I also add as my veges, small cut up carrots and fresh tomotoes.
Mmmmmmm now i feel like some for dinner, but have to finish leftovers from last night, yummy nachos hehe.
I think i will make lasange tomorrow night
