Topic: Focaccia Recipe. Posted: 16 May 2011 at 4:03pm |
This recipe has become a favourite in our house. Mikey loves to help me make it and I love the fact that I don't have to knead it, it's so easy!!
It's a fantastic addition to those lovely winter soups and stews that everyone will be starting to make soon.
2 cups plain flour
2 teaspoons dry yeast
1 teaspoon salt
1 teaspoon sugar
1 cup warm water
1/4 cup oil
Put water, sugar and yeast in a bowl together and leave until the yeast bubbles up to the surface.
Mix flour and salt together in a large bowl and add the yeast mixture and the oil. Mix well, cover with a tea towel and leave in a warm place for an hour.
Spread the dough into a greased tray. This is where you can add the stuff on top like olives, none of my family except me like olives so I found sprinkling on a bit of chopped, fresh rosemary is quite nice.
Leave for another hour and then bake at 230'C for 10 - 15 minutes.
Super yummy warm from the oven and still good cold the next day.

I do a double lot and then do it in a big roasting tray. My kids love it and then there's also enough for school lunches the next day.

I cover mine in caramelised onions & garlic. It is so delicous - and just as good cold the next day. A small sprinkle of cheese over the top doesn't do it any harm either

That is my pizza base recipe, so I know it is good. Funny thing is I was reading it out to DH as he was writing a shopping list for me & he was the one that said it was the same as my pizza base..doh lol

Oh that's brilliant, the recipe I usually use for my pizza base isn't that great, I'll have to try this one! Thanks for that!
