Anyone have a good recipe? The one in the Edmond's book is very gluggy and makes hardly any.
I love them and hoping Jackson might try them. But want a tried-and-true recipe.

Don't have mine at work (funny that) but it uses soda water and makes really lovely light fritters...I'll see if I can find it when I get home.
I LOVE corn fritters!!! I think we might have them for dinner now, with a salad of course!

you need...
410g can creamed corn
1 cup self raising flour
1/4 cup milk
3 eggs, seperated
salt pepper to taste
2 tblspns parsley
5 tblspns oil for cooking
method:
mix corn, flour, milk, egg yolks, salt, pepper and parsley. beat whites until fluffly then gently fold into corn mix. heat oil over med heat. place large spoonfuls of mix into pa and cook for 3 mins each side.
they serve theirs with a salsa... i am going to try them tonight with some crispy bacon and tomatoes!

gabriel scoffed down his no problem, and my husband loved his... toby wasnt so keen tho! and eden was okay till she saw yoghurt!

We tried the new food in a minute Cajun corn and potato fritters recipe this week - and it was yummy. Nice texture with the potato and not too gluggy. It has a mild spice - I didn't think my toddler would like them - but they went down well! So easy and only 4 ingredients - so you can whip them up in no time.
FOOD IN A MINUTE - CAJUN CORN & POTATO FRITTERS
Time & Serves
* Preparation time: 15 Minutes
* Cooking time: 20 Minutes
* Makes 15
Ingredients
* 450g pkt Wattie's Homestyle Mashed Potato
* 400g pkt Wattie’s Frozen SteamFresh Cajun Style Vegetables
* 3 eggs, beaten
* 1/2 cup self-raising flour
* oil for frying
Method
1. Place Wattie’s Frozen Homestyle Mashed Potato in a microwave-safe bowl and cover. Cook on high for 6-8 minutes. Remove from microwave and stir until fluffy; set aside to cool for a few minutes.
2. Place both bags of Wattie’s Frozen SteamFresh Cajun Style Vegetables in the microwave and heat on high for 4 minutes. Carefully cut open and drain off any excess water and add to the mashed potatoes.
3. Stir in the eggs and sift in the flour. Mix together until smooth.
4. Heat oil in a non-stick frying pan over a medium heat and cook quarter cupfuls of the mixture for 5-7 minutes or until golden brown, turning once.
5. Serve as a brunch or light meal with bacon and slices of avocado.

I just tried some different ones (my own mix) and they are yummy!! Alex is hoeing into one as I type.
I just put
1 tin creamed corn
2 courgettes
1 leaf silverbeet
1 tomato
cut up and mix together
Mix together
1 c flour
1t baking powder
Mix everything together and cook tablespoon fulls (or whatever you want) until brown on either side.

I love corn fritters and make them all the time. I love having them with a selection of sauces.
My recipe that I use is:
Put 1 can of creamed corn into a bowl, stir in 1 egg and then add 3/4 cup-1 cup of flour, enough to make a good batter, 1 tspn baking powder and salt and pepper to taste. If you add to much flour then you can just mix in some water to make it to the consistency that you want.
I sometimes add coriander and cumin if I want them to be a bit spicy.
If you only have whole kernal corn then save the liquid that it is in and use that to thin down the batter.
