Choc Truffles
50g Butter
100g Cooking Choc
About 1 cup Icing Sugar
1 Tblspn Rum (or a couple of tespns of rum essence)
1 tsp Cocoa
Coconut or Chocolate Hail
Melt butter and chocolate on stovetop (gently) and add 1/2 cup of icing sugar. Stir til its thick enough to handle. Add rum and cocoa and enough of the remaining icing sugar to make a nice thick mix. Roll tablespoon fulls into balls and roll in coconut or chocolate hail (I use hail coz DP hates coconut!). Chill til firm and voila

It makes about 15 so I triple the recipe.
Bacon Bean Parcels (for 6 people)
400g Green Beans
6 thin slices middle rasher bacon (remove rind) OR prosciutto
1 TBlspn Olive Oil
Cook beans, drain and refresh under cold water. Divide into 6 equal portions and wrap in a slice of bacon/proscuitto. You can do this up to 2 hours before serving it if you want to be abit ahead just chill.
Preheat oven to 200deg, place beans in bacon on tray and drizzle with oil. Roast for approx 10 minutes or until bacon/proscuitto is crispy and serve immediately

It puts abit of a fancy spin on beans!
Herby Hasselback Potatoes
2kg peeled Potatoes
2 tablespoons Olive Oil
1 TBlspn chopped Rosemary (I just use dried usually also try other fave herbs)
2 Tspns Sea Salt (or whatever salt you have)
Pepper
Preheat oven to 180deg and line a baking tray with paper. Cut peeled potatoes into halves crosswise. For each potato place cut or flat side down and make thin evenly spaced slices about 2/3s of the way through the potato. Keep them as close together as you can.
Place potato cut or flat side down on tray, brush with oil and sprinkle with herbs, S&P.
Bake for approx 45 minutes til golden and crispy.
These are delish and a big fave in our house!
