I need meals that can either be done in the slowcooker or cooked in about 20 mins BUT

I have IBS, which means I can't have gravies, many sauces, fatty meats etc (so all casseroles are out). This limits my options generally to potatoes, mixed vege and some form of quick meat, or a stirfy.

Any hints/suggestions? Also, we're on a pretty tight budget so we don't eat nice steaks or anything.

Pretty much all my meals take 20-30mins max..

Risotto (out of the box lol)
Pasta bake, I can't be assed cooking it int he oven sometimes so just cook the vege and pasta up, heat the sauce and mix
Home made fish n chips
Frittatas
Fritters - basically corn fritters or mix up all leftover vege with some potato and fry it into fritters
Home made burgers
Mac n cheese with chicken or something on the side as well as vege - we usually do corn on the cob cause Daniel loves it.
Mexican, like tacos etc takes hardly any time and you could all have what you like

Dunno if any of those are useful. I use healthyfood.co.nz lately to find some yummy easy meals.

Tonight we had meatballs (with egg, spring onions, garlic, flour to thicken) on top of rice sprinkled with a little salt for seasoning.

We are also having this week :
-homemade chicken nuggets & chips.
-pasta with ricemilk white sauce seasoned with garlic & parsley. I would imagine that white sauce, either dairy or not, would be fine for IBS as it's from an elimination diet. Dh also cooks some sliced schnitzel to put in it.
