I am doing a roast for tea tonight and have put in extra potatoes, kumara and carrots thinking that I will use the left over veges for tomorrow nights tea. But now I can't think of what I will do with them tomorrow. Any ideas?

Pasta salad. Just make up some sort of sauce to go with it, I usually use pesto.

Roasted vege lasagna,
Roasted vege risotto.
Roasted vege cannaloni (mix with some ricotta and herbs and garlic, use to fill tubes, top filled tubes with tomato based pasta sauce and cheese)
Roasted veges and couscous. Just put them on top of some couscous and sprinkle feta on top.

Chunky stirfry type thing, mmmm. Could even put them in with rice risotto, that takes gooooood.

I use mine with cous cous - just make the cous cous, then heat the veges and toss through. Add some crumbled feta too. Yummo!

I do a roast veg salad with mine. Green leaves of any sort, you warmed up roast veg, avocado slices, chunks of feta, pumpkin/sunflower seeds and dressing made with orange juice, lemon juice and olive oil.

We just chuck the leftovers in a big bowl, add some corn kernels and sauce and away you go! Roast Vege Salady kinda thing haha

ETA: You can even add bacon rashers or shredded meat if there is any left over!
