I caught three today and DH caught two (not counting the one he dropped over side of boat while bleeding it!! DOH!!!!!!!)...
so any ideas how to cook if you dont have a smoker?
I ended up getting him to fillet with skin on, then i baked them = sprinkled lemon juice and lemon pepper over them and wrapped in foil and baked for 25 mins....was good but am sure there is a better way....
and no there was no snapper out there today....bugger!!!

The only fish I ever caught was a decent sized Kahawai (put me off fishing for life seeing it flapping around on the bottom of the tinny  ) but my grandma did it in a white sauce.

I am sure that at the Warehouse you can buy single smokers. Could be worth it.

I was a puree feeder, forward facing, cot sleeping, pram pushing kind of Mum... and my kids survived!

yeah might do that....but am sure there is more to kawhai than making fish cakes or smoking...
Emma - you will NOT wanna come out with BSDH then....head chopped off in one chop, bled them off side of boat...i was trying to drink my coffee and had to look away...ella was enthralled!

yeah everyone suggests fish cakes....and there is a fishing forum one with 2 suggestions on it where i took my idea from but thats it....surely there must be more...OR i go gt a smoker!

You used to be able to get a smoker at the Warehouse for a pretty reasonable price that was supposed to be rather good.

whenever we have kahwai its either smoked or turned into a smoked fish pie
i have had it straight from the smoke house yummm
Could you make a beer batter and turn it into fish and chips?

In my opinion, the only way to have it is coated in egg and breadcrumbs, or beer batter. Nothing flash but tastes devine! And what a waste to stick it into a pie!

yeah it is an oily fish to start but goes dry quite easy.....was yummy tho and know I will end up catching more of those than snapper...LOL!!!!
might have to buy a smoker from sounds of the recipes....love fish pie tho!!!

Whenever we catch kahawai we always smoke them, if my memory is right we rub salt on then sprinkle brown sugar on and then put in smoker, very yummy fresh. Not sure of any other ways to cook it.
