We have guests this year, we are just doing a BBQ but would like to make a dessert as well.

This one is more a xmas cake than a pudding but you can serve it with custard & ice-cream to make it more dessert-like...
1kg dried mixed fruit
2 cups strong coffee
2 cups self raising flour
150g fruit & nut chocolate, roughly chopped
Soak the fruit in the coffee overnight. Lightly mix in the self-raising flour & the chocolate. Bake in preheated oven at 180 degrees for 50 to 55 minutes or till skewer inserted into centre comes out clean.
So easy & so delicious!

we do the standards here - trifle, pavlova , jelly.
i saw a trifle done once with berries and booze (kirsch i think). it was a more grown up one.

I also doing a BBQ.
Im doing things cheap and easy. I have guests bring desserts also but this is what im doing.
Fruit salad - a few tins in a bowl lol)
Brandy Snaps - im using that fake whipped cream for the centre
Im also making an instant dessert(choc) - i also add m & m's, mini marshmellow things you use in hot choc. This is great hit with the kids. You can also add white/dark choc bits etc.

Strawberries
watermelon

I am doing easy ones, fresh fruit salad & mini meringues (store bought) with a dollop of cream & a strawberry on top.
Ice creams for the kids
Brandy & apricot pies (hate the mince ones) with brandy cream & with coffee/tea/wine hee hee

I saw a nice easy one in the Treasures Mag. Cut ready made puff pastry sheets into star shapes about the size of your hand, and then serve them up with whipped cream and strawberries in between two with a sprinkle of icing sugar over the top. Very pretty and yum. I will be definitely doing them.

oooh the puff pastry reminded ... cut a sheet into four, spread a bit of jam on then place a half a pear (canned will do ontop )... can primp up the edges of the pastyr or not... bake till the pastry is done... serve with cream or ice cream...

Ambrosia is our traditional every year
all it is is a 1kh tub of mixed berry or fruit of the forrest yoghurt fold in lots of whipped cream and a bag of marshmellows
SOOOO good
Iv also made these:
they are just nibbles but they are rockyroad mellowpuffs with white choc drizzled on top and a jaffa and mint leaf
