Topic: Freezing/Thawing/Storage of meat...help Posted: 08 August 2009 at 10:12am |
I don't cook with meat often and I'm still new to all of this ...I have boneless lamb steak that my nana bought, she put it in the freezer after she bought it and currently it's sitting in my fridge - how long can it stay in the fridge for before I have to use it?
And if I'm chucking it in the crock pot with some vegies and soup mix, roughly how long should I leave the crockpot on for so I know its thoroughly cooked through?
And once cooked, whats the deal with safely storing it, does it need to be luke warm or stone cold before I can bundle it up in containers and freeze?
If anyone could give me a brief run down on the rules with freezing and thawing meat, and storing meat/meals etc it'd be greatly appreciated.
I have tried googling but lots of conflicting advice..

If you are using meat in the crockpot you can put it in the pot frozen in the morning and let it cook all day.
If you put meat from the freezer into the fridge, it's thawing the 1st 12 hours, and will keep safely for 2 days from thawed.
If I'm freezing cooked meat, lukewarm is fine, it doesn't need to be stonecold.
Soup in a crockpot I like to be cooked all day so the flavours are nice and rich. Thawed Sausages or casserole in the crockpot I do for 7-8 hours on low, or 4 hours on high.

48 hours once its defrosted.
if you going to cook it in the crockpot Id say a minimum 3 hours - when I do lamb I brown it in the frying pan first then stick it in the crockpot about lunchtime and have it on high for about 2 hours then I turn it down low, we eat about 6.30-7pm
otherwise sick it on in the am on low and will be still ready at dinner time

Bizzy so does that mean since I've thawed it from frozen in preparation to cook I can't freeze the meat once I've cooked it?

no - once the meat is cooked, for example in a stew, you can freeze it again. You just can't freeze the meat, defrost and re-freeze when raw.

For the crock pot check with the manufacturers instructions - either on low for 6-7 hours or high for 4.
Previously frozen meat should be used within 48 hours of being thawed.
Once cooked, its is best to be cooled before being frozen again.
I usually put any cooked stew into sealed plastic containers and leave to cool on the bench before going into the freezer.
To re-heat - can either microwave or thaw and cook until heated all the way through.
