it's jacks birthday tomorrow and i've been meaning to ask those in the know which is the best icing recipe to use. i'm doing a thomas cake, basically the train cake from WW cake book but without the carriages.
last time i used the vienna cream icing and it wasn't very nice and didn't look very good...suggestions?

I love the butter icing... i think the recipe is in the back of the book and its really easy to ice with.
Its just butter, icing sugar and water...I think. Its also in the Edmonds cook book under icing.
You just have to watch when using the food colouring as because the icing has a yellowy tinge to it it can make the colour go slightly off so test a wee bit first.

If you beat the butter really really well (ie, with an electric mixer) it goes white, then its easier to colour.

yep, butter icing. i use about half a block of butter, nuke it in the microwave to make it soft, not melt it, add a whole lotta icing sugar (usually ends up being nearly three quarters of a kilo) and add little part sof boiled water to soften, not melt.

haha my way of doing icing is either 1) buy a cake ready made or 2) get someone whos good at cake icing to make it ....
