   hi i am thinking of making truffles for xmas gifts, does anyone know of any great recipes. I am thinking of maybe a plain chocolate, white chocolate, apricot, mint and maybe strawberry.

   Apricot and White Chocolate Truffles are yummy (I got the recipe from Tupperware and make them all the time).  PM me if you want the recipe.

   These are really yummy..
 Rum And Raisin Truffles
 
 2 tbsp raisins
 2 tbsp dark rum
 150 g chocolate
 1 eggyolk
 25 g butter, softened
 1/2 cup icing sugar
 
 Chop raisins, mix well with rum and leave for 10 minutes.
 
 Melt chocolate in a bowl over hot water. Remove from heat and mix in icing     sugar, egg yolk, butter, rum and raisins. Chill 30-40 minutes until almost set.
 
 Shape into balls and roll in coconut.
 
 Makes 28.

   A super super easy one is:
 2pkts choc mint cream bisciuts
 2 pottles of standard cream cheese at room temp
 
 Blend together roll into balls and allow to set (can get alittle messy have a bowl of water close)
 
 melt choc and dip balls into then leave to set.
 
 Sooo very very easy and they taste pretty good was in a magazine a wee while ago.
