   that had 1 tsp of lemon rind in it - do you think it would matter too much if that was left out?  I don't have any lemons here and I want to make these muffins lol!

   Can't imagine it would hurt. As long as its not missing out of an icing recipe (found that out the hard way lol)
 
Oh and I get those little round plastic lemon bottles of lemon juice for like 99cents at the supermarket for emergencies when I dont have lemons lol.   
Whoops didnt realise it was lemon RIND lol .... still can't see it being a problem though

   No its in the actual muffin recipe (which is for muffins with a tsp of strawberry jam in the middle so not sure how the lemon rind fits in anyway lol!)  I've got one of those plastic lemon bottles - but recipe says lemon rind not juice so will probably just leave it out

   Put in some orange or grapefruit rind if you have it, otherwise just leave it out.
