I made this cake yesterday not because I can't have dairy, but because I didn't have enough butter. I am now a convert to this cake, I'll never go back to my other recipes!


Grease and base-line a 20cm round, loose-based cake tin.

Heat the oven to 350F/180C/gas 4.

In a medium bowl, sift together:

250g (1 1/2 cups) plain flour
4 tbsp cocoa powder
250g (1 cup) caster sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

In a separate bowl, mix together:

5 tbsp (1/3 cup) of vegetable oil or apple puree
1 tbsp vinegar
1 tsp vanilla essence
250ml (1 cup) warm water.

Mix these into the dry ingredients until just amalgamated. Do not over mix.

Pour into the prepared tin and bake for 30-35 minutes until the cake has risen and springs back when pressed.

That's basically the one I make, devine isn't it. Best thing is that it keeps for days The recipe I have is a double of the above.

amykt for sure, let us know how it goes!

AandCsmum it is fantastic!! I genuinely thought it wouldn't be that great, DH wasn't keen at all thinking it would be really dry - but it's actually the best cake I've ever made and it tastes better today than it did yesterday when I made it!

ok - truely is really yummy! so nice and soft too and soooo easy to make - i hate recipes where you have to cream butter and sugar, this one is simple as!

I didn't ice mine but I'm sure there are dairy free icing recipes out there - I don't have one that I could recommend though.

In saying that, it was really good without the icing, I just dusted it with icing sugar and it was great.

You could just ice it with icing sugar, food colouring, and water? Or add some cocoa instead of food colouring if you wanted chocolate icing.

Emma, it's way better the day after, we never eat it on the day we make it

Dust with icing sugar, delish enough to have without icing or just making cocoa icing (cocoa, icing sugar & water)

Also if you leave out the cocoa it makes a nice vanilla cake

Oh & if you do the double recipe I find it makes a ring tin plus a loaf tin enough for the whole week.

Ah excellent thanks for the help ladies.

I've only ever made ganache as icing, I'm so new to this dairy free stuff. I bought some vinegar today so will give it a go tomorrow.

AandCsmum awesome, thanks for the tips!

I didn't think to make the water/cocoa/icing sugar icing so I might give that a go the next time I make it. I'm loving it just on it's own though.

Only thing is my cake tin was too big so next time I think I'll "have" to double the mix because it came out quite small

I make butter icing but replace with Olivani and Soy Milk.

Just saw this was bumped, this is still my go to cake and I make it at least a few times a month for people (mainly for DH!!) I still maintain it's the yummiest, easiest cake I've ever made!
