I doubled the recipe as 1/2 egg just sounded like too much effort.

makes 12
45g butter at room temp
1/4 cup caster sugar
1/2 egg
1/2 tsp lemon essence
1/2 cup plain flour sifted
1/2 cup self raising flour sifted
1 TB milk.

1. Preheat oven to 160C, lightly butter cookie sheet or use baking paper.
2. Cream butter & sugar in an electric mixer. Mix in egg & lemon essence, then add the flours & mix to a firm dough.
3. On a floured surface, roll the dough out until about 5mm thick, cut in lots of different shapes & glaze with milk.
4. Place on cookie sheet & bake for 10-15 mins.

Same recipe but the way I made it which made dairy free lemon jumbles

90g canola oil
1/2 cup caster sugar or if you don't have caster sugar whizz it in a grinder.
1 egg
1/2 tsp lemon essence
1 cup plain flour sifted
1 cup self raising flour sifted

2. Mix oil & sugar in a bowl. Mix in egg & lemon essence, then add the flours & mix/knead to a firm dough.

Ohh sounds yummy.

Do you think you could you use lemon juice instead of lemon essence?

Finally got round to making these - Yummo!!! I did it with the rind of one lemon and juice of half a lemon, worked out really well.

They are quite addictive
