Hey everyone,

Super excited as we just bought a new 6L Slow Cooker as we will have a newborn in 9 weeks and thought it will help us eat well without too much work!!!

The issue is that we are vegetarian and it feels really hard to find good vegetarian slow cooker recipes. Anyone have any tried and true ideas?

Exciting! I have a vegetarian slow cooker recipe book - love it! A friend has borrowed it just now, but this would be a great time to buy online at amazon or the book depository - Fresh from the Vegetarian Slow Cooker. The black bean chilli is awesome.

I am going to try slow cooker vegetarian lentil dhal on Monday night so if it is any good I'll share the recipe :-)

Ooo, thanks! I have been looking at books but hard to tell which ones are good! I will have a hunt for it!

So far so good with the experimenting!

In case anyone is looking for some good recipes... here are a couple I have had some success with so far:

Minestrone Stoup

Ingredients:
•2 Tbl olive oil
•2 small yellow onions diced
•3 carrots, diced
•2 ribs celery, diced
•2 medium zucchini, ends trimmed, diced
•2 cloves garlic, minced
•1 tin red kidney beans, rinsed, drained, 1/2 mashed
•1 tsp salt
•1/2 tsp ground black pepper
•1/4 bunch Italian parsley, chopped
•1 28 tin whole tomatoes & juice, mashed up a bit
•2 1/2 cups vegetable stock
•1 bay leaf
•1/2 head Napa cabbage, cored, chopped
•2/3 C dry red wine - not optional totally makes this meal
•1/3 C whole wheat elbow macaroni
•some water
•Grated Parmesan for serving

Saute the celery, carrots, onion, zucchini, and garlic in olive oil in 2 batches, just until translucent & some color started to show on the veggies. (optional) Add everything except the last 5 ingredients. Cook on low for 6-8 hours. Add everything else except the cheese and cook on low for 1 1/2-2 hours. Serve with cheese.

Slow-cooker Chana Masala

You will need:

1 medium onion, diced
2 cloves garlic, minced or crushed
1 inch ginger, peeled and grated OR 1 tsp powdered ginger
1 tsp cumin
1 tsp coriander
1 tsp turmeric
Salt to taste
1 cup dried chick peas (or 1 15 oz can)*
12 oz diced tomatoes
1/2 tsp garam masala

Directions:

Soak dried chick peas overnight. Drain the soaking water and boil the chick peas in fresh water on the stove until they are soft.

Sautee the onion, garlic, and ginger in the olive oil.

Add all ingredients to the slow-cooker. Cook for 6-9 hours on low.
