It's that time of year again! I want to make some yummy soups that I can split up and keep in the freezer for those days where I can't be bothered making lunch and end up eating junk

If you get a packet of Kings Soup Mix - Add Carrot and Onion chopped up. It is very nice, then place into containers and freeze!

carrot soup - we tried this and all LOVE it - the boys had thirds.
chop an onion, two cloves of garlic and 1.5kg of carrots. Put 25g of butter in saucepan and gently fry the veges for 20 minutes. Add 1T of fresh thyme or 2t of dry (don't forget this, i did and it tasted not so good). Then 3 cups of chicken stock. Simmer for 20-30 mintes. then blend. Take two slices of bacon and chop finely - fry until crispy. Serve soup with a tablespoon of sour cream and crispy bacon on top

I'm a big fan of the pumpkin soup kind.. lol
Usually i grab a packet of the kings chicken soup mix.. do it addording to directions ie with the stock etc.. chicken stock i use mad eup with the water and adding the packet mis. I then am very lazy and use food processor to mulch veges up into pieces that look like thet've been grated just thicker, add that in as i go, usually at least half a pumpkin, 3 -4 potatos and 2 - 3 carrots, chuck it in the pot with the heap of stock, let it boil/simmer away long on low heat, stirring as i go to break up the veges, adding more stock water if it starts to get too thick. near the end of cooking when everything is all nice and thick and veges are cooked (usually have broken down to make nice thick creamy soup) i mix a little water with a soup mix of pumpkin and garlic - by maggi i think. (sometimes add another half packet depending on how much am making), and put that in to add a little zing to it.
usually makes enough to feed our family, including me going back for 2nds and 3rds, lol, plus mike doing the same, and another 1 - 2 ice-cream containers to freeze.

I have a great recipe for pea and bacon soup too, and one for a kumara soup that is delicious - will dig them out.

I love pumpkin soup. I normally add ginger and fresh coriander. Super delicious. I love making soup in my Nigella Lawson pots to feel like a super mum.

I've got a really yummy leek and potato soup recipe in my "Passion for potatoes" recipe book at home - it has a flash name but is essentially leek and potato soup.
Will copy it out tonight.
