Does anyone know if lemon curd is ok to eat when you're preggers? I'm a little dubious because it's made with raw eggs, but does anyone have more info? I love it and really, really want to make some but only if I can eat it too!

hmmm my lemon curd is not with raw egg! i have a recipe that you make it in the microwave i can post if you like.
yum i lovvveeee lemon curd! now i want some!!!
1st round IVF 7 Eggs, 6 fertilised, 1 transferred with 5 on ice!

i decided i would just post the recipe! and what do you know the recipe book opened straight to the page thats how often i have used that particular recipe!!!

Lemon Curd

makes 2 cups
ingrediants
1/2 cup lemon juice
75g butter
1 1/4 cups castor sugar (is fine with normal too)
2 tablespoons grated lemon rind
4 eggs

put juice and butter in bowl microwave for 1 1/2 mins on high
whisk in sugar and lemon rind
add eggs and whisk together
cook on high for 4 minutes
stir and put back in for another 3 minutes
whisk well for 1 or 2 minutes
pour into hot dry clean jars
cover when cold and set.
store in fridge!!!
yum yum yum

Enjoy it! (i love it on crumpets!!!)

I wouldn't think any is made with raw eggs - it is cooked in all the recipes I've seen

Thanks for the help - and recipes! It's not really 'made' with raw eggs the same way mayo is, but they're not exactly hard boiled either so I just wanted to be 100% sure. Yum!

I was wondering this just the other day.
I'm pretty sure I was told no lemon curd. Then I was wondering if the commercial ones used pasteurised egg - in which case it'd be ok.
I bet it's one of the ones you've got to eat within a few days of opening though.

All lemon curd recipes will cook the egg - just the same as custard does
