Sunday is pancake day in our house and these pancakes are utterly fabulous.
1 cup buttermilk (instead of buying buttermilk, just add 1 tablespoon of white vinegar to 1 cup of regular milk and leave to sour for at least 10 minutes)
2 eggs
2 Tablespoons vegetable or canola oil
1/2 cup butter, melted and cooled slightly
1 1/2 cup all-purpose flour
4 teaspoons baking powder
4 teaspoons light brown sugar
1 teaspoon salt
Whisk together milk, eggs and vegetable oil in a medium bowl, then whisk in the butter.
Stir together flour, baking powder, sugar and salt in another medium bowl. Whisk in egg mixture until combined.
Once combined, let the batter sit for 10 minutes while frypan preheats
Pour 1/4-cup measures of batter onto fry pan until bubbles have formed on the top and sides of the pancakes and broken, about 2 minutes. Flip pancakes with a spatula (a super thing metal spatula works great) and cook until undersides are golden, about 1 minute more. Lower heat if pancakes brown too quickly.
Serve with maple syrup or golden syrup if you must.

The secret of pancakes is the heat of the pan, can't be too hot as they'll burn too cold and they'll go all soggy.
Make sure you preheat the pan. I prefer to use cooking spray but a small dash of canola oil does the trick as well!

Man, I'm soooo wishing I could eat dairy and eggs right now  will save up the recipe for when Natalie decides to wean herself!
