Topic: Rice Posted: 11 April 2010 at 9:34am |
Probably a bit of a random post but.....
Is it safe to keep cooked rice for later on and if so how much later and how should it be kept.
I seem to come across varying opinions on this, could I could rice for dinner tonight and keep it in the fridge to be used tomorrow?

I've heard it's not good to reheat cooked rice, but I've had numerous leftover meals for lunch the next day that include rice and never had any problems. I probably wouldn't have it for dinner the next night though

If you put it in the fridge straight away then it should be fine.

I quite often cook loads of rice when we have it for dinner, then make up my lunch for a couple of days in advance. I have never had any problems but I do microwave the crap out of it when I reheat it .

Its ok to reheat the next day, but any longer its not. Rice is notorious for bacteria if left in the fridge for longer than a couple of days.
Main reason sushi is on the banned foods list in pregnancy - its the cold rice not the raw fish that's the worry.

Hmmmm, Im the same as you misscheeky. We cook extra rice and make fried rice etc for the next couple of days.
I thought rice only grew bacteria at room temperature??

Okay not sure how do a link
http://www.nzfsa.govt.nz/consumers/food-safety-topics/foodborne-illnesses/safe-cooling-of-cooked-rice/index.htm
Says that as long as its cooled as quickly as possible , covered and refridgerated as soo nas possible its fine. For non pregnant people

Hi,
The problems with rice arise when it's not cooled quickly and evenly before storage eg: if you make a large pot of rice and pour it in a bowl to cool down, the rice in the centre of the bowl will remain warm and be the perfect breeding ground for bacteria. So as long as you cool the rice quickly and evenly before putting it in the fridge, you'll be OK to reheat it the next day or 2 (only re-heat once).
Hope that makes sense

Do you have to reheat?
I ask cos DS loves rice with his dinner, I have his other food ready to go when we walk in the door at 4.30 but don't have time to cook rice before he is screaming for tea - we don't have a microwave and he likes cold food, so if I cool it quickly put in fridge I could use it the next day?

Any cooked rice that is cooled in the fridge should be reheated until steaming hot if it's going to be eaten again. I really wouldn't be giving cold rice to anyone. Cooling in the fridge doesn't necessarily kill all bacteria that has formed while it is cooling, but heating it hot again should do.

I eaten cooled rice sometimes and haven't had anyhthing bad happen. I even ate sushi whilst pregnant..but it was quite freshly made. And yea fried rice..the rice is left in the fridge overnight then used.......and even after that (like getting it for takeaways) I'll heat it up and eat it the next day...and til was fine...so essentially that's reheating twice.

I thought reheating the next day was OK? the rice is the main reason sushi when pregnant isnt the best idea - I thought it was the ingredients, but apparently rice can have all sorts of nasties in it.

Also sushi rice usually sits unrefrigerated.

I read this in the baby-led weaning book.

Wow! I didn't know any of this. I was actually just thinking about making some rice and storing it to add to DD's dinners in the next couple of days... Maybe I won't and I'll just "cook to order".
