Sorry for the delay for those that asked for this a while ago!
I made this cake a few weeks ago for DH who loves Tiramisu, it was so good and so simple to make. The recipe came from a Foodtown Magazine
Ingredients:
200g Round Sponge Cake
1 Cup Black Coffee
100g Dark Chocolate Roughly Chopped
400g Marscapone
1/2 Cup Kahlua (Optional)
Cocoa Powder for dusting
Method:
1. Line a 20cm spring form round tin with baking paper.
Slice the sponge cake through the middle to create 2 layers and place one layer in the base of the tin. Drizzle half the coffee over evenly. (I bought a sponge from the Countdown bakery that came with two halves so I didn't have to cut the sponge)
2. Mix together the marscapone and Kahlua, and then spoon half on top of the sponge. Smooth down with a spatula to form an even layer, and then sprinkle over half the chopped chocolate.
3. Place the final layer of sponge on top and drizzle evenly with the last half-cup of coffee. Sprinkle with the rest of the chopped chocolate then spoon over the rest of the marscapone mix and smooth down with a spatula.
4. Cover with cling film and refrigerate for a minimum of 3 hours. When ready to serve, pull away the tin and dust the top well with cocoa. Slice with a hot dry knife and serve. Serves 8
It was really good and a cake was great as an alternative to the individual servings I would usually make with lady fingers.
