Does anyone have a good one? I'm just looking for something fairly basic so we can have them for lunch and use up old veges!

Hi Bec I use this quiche recipe all the time for our leftovers. Its delicious and makes a grat dinner dish too with sausages on the side Its super quick to mix up too!

Self-crusting Quiche

Preheat oven to 200deg.

Cook 1 large chopped onion and 2 cloves/tspns crushed garlic in butter til soft and allow to cool.

Combine 1-3 eggs with 1 cup of milk S&P, curry powder and mixed herbs (thats what I use but you could use sweet chilli sauce or whatever you want to chuck in). Beat with a fork.
(1 egg is enough to set 1 cup of milk but the more eggs the richer it is)

Pour into a large bowl containing 1/2 cup self-raising flour (or plain flour w approx 1 tsp baking powder) and stir til just combined.

Add 1 cup of grated cheese (I don't usually add that much) and approx 3 cups veges (I just chuck in whatever we have sometimes its a cups worth sometimes 3 or 4 cups) and pour into a well greased dish (DO NOT use a dish with a removeable base).

Cook for approx 30 minutes (can take up to 45 depending on how many veges you use) and allow to cool for 5 minutes before serving.

i use this recipe all the time and it is sooo yummy and easy! and you can basically add anything in you want.

Self-Crusting Quiche

1pkt Ham
5 Eggs
3Tbsp Melted Butter
1 1/2cups Milk
1/2 cup Flour
salt and pepper
1cup Grated Cheese.

Beat eggs, add melted butter, milk, ham and cheese. Stir in sifted flour, salt and pepper. Mix well. Pour into greased quiche dish and bake 30mins at 190'c. For a more grown up version try adding onion, spinich and tomato (or capsicum etc etc).
