Topic: lemons lemons lemons... Posted: 14 September 2010 at 9:58am |
I have a tree full of lemons and was wondering if anyone has any good ideas on what I can make or do with them. I thought about putting this in the food thread but figured it might be non food related ideas too. Any help much appreciated.

oooh Lemon Syrup Muffins!! My fav!! YUM:
Makes 12 med size muffins
2 cups self raising flour
3/4 cup sugar
75 g butter or margarine
1 egg
1 cup milk
grated rind of 1 large or 2 small lemons
Syrup:
1/4 cup lemon juice (plus some pulp)
1/4 cup sugar
pinch mixed spice (for orange muffins if desired)
1. Preheat oven to 200°C. Grease or spray the muffin pans
2. In a large bowl, sift the flour and add the sugar
3. Melt the butter. Beat together the butter, egg, milk and grated rind
4. Tip into the dry ingredients and mix gently
5. Bake for 15-20 mins or until golden and the muffins spring back when gently pressed with your finger
6. While the muffins are baking or at least still hot, mix together the juice and sugar in a saucepan for the topping and boil for a few mins or until slightly reduced.
7. Spoon/drizzle or brush the syrup over the muffins while they are still hot and in the pan.
I also found this link which looks to be full of useful things you can do with lemons HERE

mmm lemon curd. You can also squeeze and freeze the juice so you have 'fresh' jiuce when you need it, freeze in normal ice cube things and then stick into bags.
I love lemon and poppy seed muffins, yummo.

Mmmm Lemons! I craved these whilst pregnant!
Lemonade, lemon meringue pie, lemon syrup muffins/cake, could make a banana cake and have lemon icing... Could get some fish and use the lemons to flavour it... Etc!

You can cut them in half and then smear it all over wooden chopping boards, leave to dry and then wipe with a warm dishcloth - best way to clean wooden chopping boards apparently.
If you have a waste-master throw a wedge of lemon down it with some ice cubes. That helps sharpen the blades (the ice) and the lemon makes it smell nice.
And somewhere I've got a yummo recipe for a lemon tart - I'll try and find it for you.

Mmmmmmm, my dad makes a few batches of ginger beer most years - except for the years when he doesn't have an abundance of lemons. Yum!

You can make morroccan preserved lemons and use them in cous cous, with fish, chicken or any meat dishes, salads and of course Morroccan dishes. Here is an easy recipe from googs...
Recipe:
Take each lemon and slice it in four, but without making the cut all the way through. Then, holding the lemon open, coat each portion with salt. I know this sounds strange, but iodised salt is best as lack of iodine is causing problems world wide and a lot of so-called fancy salts lack iodine.
Place a tablespoon or so of salt in the bottom of a clean preserving jar and place the lemons in - squashing them down as you go. as you fill it up, add a couple more tablespoons of salt. Now - for added flavour try adding a couple of cinnamon sticks, four or five cloves, a sprinkle of coriander seeds, a couple of bay leaves and eight or nine black pepper corns.
Next, fill the jar to the top with lemon juice and seal tightly. Leave it in a mildly warm dark space for about five or six weeks, turning over every few days.
Once you open it, keep it in a refrigerator or very cool space. You can add a new lemon plus salt and juice from time to time.

Lemon honey (just lemon juice and honey mixed together) or lemon spread which is sooo yum, don't have the recipe handy but it is like a smooth jam, mostly sugar, lemon juice and rind, so nice on toast or muffins and goes very nicely with cream cheese

Just made lemon curd and squeezed a whole lot and put them in ice cube trays. But I got a fantastic tip after I had done all the squeezing. Just cut them in half and freeze. Defrost in the microwave and use like a normal lemon. Thought this might help someone.
