In this case, butter beans.

Do you have to blanch them first?

I also have huge amounts of corn on the cob growing (over 80 ears so far!!) can i freeze that??

I know corn freezes well just put in the freezer with skin still on.

I have a freezing vege book here.

Butter beans. Wash and trim ends and string if necessary.
Leave whole or cut into 2cm pieces or slice finely.
Too cook put them into boiling water.

Whole = 3 min
2cm = 2 min
sliced = 1min

Drain and store well in freezer

We used to blanch beans - not sure if you *have* to or not though.

SMS, do you mean with the leaves still on?

i have no idea i dont eat beans But the book doesnt say removed leaves so i guess not

As far as i was concerned, you pick them, trim the stalk/end bit if you want and freeze them but my mom was insisting that i had to blanch them and it looks like she's right. Shes always bloody right.

I have like 3kg of butterbeans here from ONE ROW of plants and i'm told they keep making beans if you keep picking.

At least the corn is going to be simple

When you want to thaw the corn, put it in a sink of warm water before you start pulling the husks off.

Haha, no, I meant the leaves on the corn, not the beans!! Just cos SMS said with the skin on, and I was wondering what she meant by skin

Oh...of course! I was trying to work out if you were going to freeze the whole bean plant or something. I forgot about the corn. Duh!

I never thought about freezing fresh vege, awesome idea.

SMS what is the book you have?  Sounds like a good one - I was wondering about how to freeze things properly.  Wish I had the surplus of beans that some of you have.  I need to take better care of mine next year and protect them from nasty snails!
