We often buy two or three packages of the 'fresh' pasta from the chiller at the supermarket and chuck them in the freezer, then when it's a late night or we are really tired, it only takes ten minutes tops to boil them up along with some sauce. I also find it easier to have a salad with whatever I'm eating when we buy that pre-bagged loose leaf lettuce (mescalun), rice doesn't take long, and something simple like crumbed fish fritters that can just be chucked in the oven. Either that or eggs on toast is a favorite of ours !

Hmm...what else...Make a huge bowl of Pumpkin or Vege soup ....lasts a few days in the fridgge...Have with some yummy bread.....

mmmm... pancakes for dinner sounds good!
Tonight it's "spinnachey goodness" - a little bacon (less rind - can't handle fat on meat now) chopped up with an onion in the pan, then lots of chopped up spinach thrown on top with a can of chopped tomatoes - I pile it over fettuccine... nyum nyums! It's good 'cause it only takes 10 minutes - and has spinnach, as I'm meat-averse now too, and the bacon in it is as much meat as I can handle right now!

We have toasted sandwiches when we are too tired (and lazy) to cook, and we put all sorts in them - my favorite is the sealord tuna mix you can just put it straight into the sandiwch as filler and it is delicious, work necessary, or cheese, tomato and onion...or fish burgers grilled on fresh buns with mayo - yum!

Ah yes, fish burgers ! Another good one, and we just chuck some tomatoes, lettuce and a slice of cheese in as well.

Fish burgers are always a winner.

I'm currently a fan of wedges with cheese, bacon and sour cream.

Our "lazy night" dinners are usually things like frozen pizza or pies or chicken nuggets and chips!

Tonight we're having pizza, chips and cheerios as it's Josiah's birthday so it's kinda a mini party!
