This probably isn't the right place to post but since I live here I'm more likely to remember posting and read the answers!

Anyways, DH spent most of yesterday arvo preparing and slowly roasting me a pork roast.

I've broken a rib so he's being my slave.

So it was almost ready when I finally had enough of the pain and couldn't breath so DH took me back to hospital.

Roast was put in the fridge after we got home about 2.5hrs later.

If I put it back in the oven and make sure it's scalding hot right through is it safe to eat? I hate wasting food especially since we don't have pork roast often at all! My dear dear roast

If it's heated back through so that it's piping hot then it will be safe.

Just spoke to my DH who is a health inspector, it should be safe to eat. However, it will probably dry out if you heat it up like that, you may be best to slice it and then heat it in the microwave.

Hope you recover quickly!

ouch!
The other thing I like doing is making a gravy, slicing the meat up, layering it on an oven tray, pour the gravy on top, heat through like that - keeps the moisteness!

Glad you didn't need to chuck the roast
