...I need your help!
We have a vegetarian coming to stay with us for 6 weeks on Saturday. DH and I, while we eat plenty of vegetables, are certainly not vegetarians!
I have a stack of foodie mags and recipe books (and, of course, Google) at my disposal, but I'd love any recipes you could share.
I should add that he's not "strictly" vegetarian. He's more of a vegetarian by proxy, so is happy to pick meat out of stuff, but I worry that by doing that, he's going to miss out on protein and iron etc. Also, being pregnant myself I'd really like some balanced, nurtricious meals.
I'm going to hit up the library tomorrow, too. So any books you could recommend, too?

Meals without meat by alison holst is a good one
My boys are meat eaters and I'm not. We just have meals where the meat can go on the side or be added in later.
Mexican is good cause everyone can make their own the way they want.
Quiche and then the boys have like chicken nuggets or something on the side or if you are clever just put the meat on one side of the quiche so theres a vego side and a meaty side. You can put spinach in there for iron.
Pizzas are good.
Roasts are also good, we just cook the meat and vege seperately and just pick out what we each want.

Alison Holst's meals without meat. I'm a meat eater, but I love that book. It's got heaps of yummy ideas. Some I adapt to add meat, and some I eat just as they are.

Another vote for Mexican because then you can have a table full of treats and people can just pick what they want
We had vege tortilla's last night. One of my faves. I make the sauce with onion, peppers, mushrooms, chickpeas and a carrot.

This is my current fav vege meal:
Spicy Bean Enchiladas
Ingredients:
1 onion
1 red capsicum
1 tbsp vege oil
420g Can red kid beans,
drained & rinsed
Can/Jar Pasta Sauce
1/2 tsp ground cumin
1/2 tsp chilli powder (optional)
5-6 soft tortillas
Grated Cheese
1) Preheat oven to 200 degrees celcius, chot the onion & capsicum into
small pieces
2)Heat oil in large fry pan over low/med heat, add onion and cook
gently for 5 mins until softened. Stir in capsicum and continue to cook
for 2-3 mins.
3)Stir in the kidney beans and half the pasta sauce. Sprinkle over
chilli & cumin and bring to the boil. Reduce heat and cook gently for
10 ins, mashing down some of the beans with a potato masher.
4)Divide the bean filling amoung the tortillas, roll up like pancakes
and place them side by side, seam side down, in a shallow oven proof
dish.
5)Poor over the remaining pasta sauce and sprinkle with cheese (not too
much!). Put in the oven and bake for 15 minutes until golden &
bubbling. Serve hot.
Cooks tip - reseal the tortillas and freeze.
I usually serve with a dollop of sour cream and/or guacamole.
Another one I love is homemade felafels served with pita pockets, yoghurt sauce and tabouleh or green salad. I oven bake instead of deep fry.
Ingredients:
1 15 oz. can chickpeas, drained
1 medium onion, finely chopped
1 tablespoon minced garlic
2 tablespoons fresh parsley, finely chopped
1 teaspoon coriander
3/4 teaspoon cumin
1/2 teaspoon salt
2 tablespoons flour
Preparation:
Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour and combine well.
Mash chickpeas, ensuring to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste.
Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten.
Spray lightly with oil and oven bake at 200 degrees celcius for 15 minutes.

I like Rose Elliot's books, and another one you might find at the library is Madhur Jaffrey's World Vegetarian which is a great book.

A fav dish in our house is pasta with mushrooms, spinach & feta (and pinenuts, if only they weren't so expensive! grr)
Anyway I fry onions & mushrooms and then add the spinach and feta ( I use goats feta). One that is all cooked I toss in the cooked pasta. yummo!
Also things like Fritatta is good as well.
I make one with potatoes, cheese, and toasted pumpkin and sunflower seeds (toasted with garlic salt, curry powder, ground cumin) . Creamed corn is a good addition as well

I am the only vegeterain in our house. So I just cook meat seperalty for DP and DS.
We love spinach and ricotta cannaloni or roasted vege cannaloni.
Just mix a packet of drained thawed frozen spinach with a tub of ricotta (I like the bouton d'or one), along with some chopped onion, some grated cheese a pinch of nutmeg and salt and pepper,. Sometimes I like to add fresh herbs. Mix it all well then use to fill cannaloni tubes. Poor a small amount of pasta sauce on the bottom of a rectangler oven dish, lay the filled cannaloni tubes in it then top with remaining sauce and some more grated cheese, cook till done.
For the roasted vege cannaloni, I cut veges up into small cubes then roast them in the oven. (veges such as pumpkin, mushroom, red onion, capsicum, garlic), once cooked let cool then mix in ricotta, salt and pepper, basil and grated cheese. then procede as with spinach and ricotta cannaloni.
I find the big jars of pasta sauce cover the dish better then the tins.
You can serve these with salad and fresh bread.

My current fave vege meal is stirfry udon noodles with tofu (buy firm tofu and fry it on its own for a little bit first so it kind of goes crispy on the outside) and lots of veges - snow peas, carrots, red/green peppers, baby corn and enoki mushrooms. Use garlic, soy and lots of chilli for the sauce

We arent vege's but we eat at least 50% meat free meals. I do a lot of vege curries (potatoe, pumpkin, carrots, onions, green beans etc), stirfries, roast veges with cous cous, mexican....

Yip meals without meat is a great book. I am not a big fat of eggs so for things like quiche, frittata etc I use less egg and more veges.
We get tofu over here that is already marinated so use that a lot in stir frys. I add lentils/chick peas to pasta sauce with lots of veges, super easy way to add protein.
I reckon being a vegetarian lends itself to being one pot cooking!!!Or am I just lazy tee hee.

felafel is pretty good (the lisa's one is ready to cook in the deli section of the supermarket). Yum in pita pockets with salad and tzasiki.

And I love Alison Holst's meals without meat. There are so many great ideas in it. It is definitely worth it.

As a long term vegetarian/vegan, Alison Holsts 'Very Easy Vegetarian' book is really user friendly and there's nothing weird or challenging in there lol 
Fancy pastas, garlic bread, stir frys, frozen spring rolls from moore Wilsons...all those sorts of things are quick and easy.

I have a recipe for a zuchinni slice from a friend
Zucchini Slice
Ingredients:
3-4 grated zucchinis 1 grated carrot 1 tin of corn 1 onion 4 rashers of bacon 1 cup grated cheese 1 cup self raising flour 1 dollop of butter 5 eggs
Method:
Preheat oven to 180C
Grease 40 x 20ish oven tray
Chop onion and bacon and sauté with butter in saucepan. Set aside to cool.
Take all jewellery off hands and arms
Put all ingredients in bowl and mix well with hands (or wooden spoon)
Once completely blended, pour into tray and cook for about 30-40 mins. Top should be golden around edges.
Test with a metal skewer to make sure fully cooked
You can take the bacon out I'm sure.
PUMPKIN FRITTERS
Ingredients:
Large wedge of pumpkin diced fairly small
60g parmesan cheese
1 cup flour (plus a bit extra to coat the patties once shaped)
1 sweet potato diced fairly small (you can also include ANY other veggies as long as they are boiled to near cooked)
Handful chopped coriander or basil (whichever you prefer) and a few sprigs of chopped parsley
2 garlic cloves
Salt and pepper
Method:
Boil pumpkin and sweet potato until cooked but not falling apart. Remove from heat and drain really well.
Mix in flour, parmesan cheese, herbs, garlic and salt and pepper. If mix is too wet add a bit more flour.
Shape into patties and coat with a small amount of flour, then fry till golden brown.
