Hi,

I need a good cheese scone recipe, the one I have just does not work that well, they always seem flat and a bit bitter tasting.

What am I missing?

Cheese Scones (with a twist)

2 cups tasty cheese
4 1/2 cups flour
4 tsp cream of tartar
2 tsp baking soda
pinch cayenne pepper
1/4-1/2 tsp dry mustard
1 can lemonade
300mls cream

Sieve dry ingredients together, add cheese, then lemonade, then cream and mix as little as possible until all ingredients come together

Roll out and divide up to size wanted. Sprinkle each scone with some more cheese.

Bake in 220 degree C oven for 20 minutes or until golden.

Makes heaps and these scones are light and airy

I just use the cheese scone recipe in the good old Edmonds cookbook & they have always turned out well. I think you really need to use tasty cheese though, to get a nice strong cheesy taste.

When I make cheese scones I add some mixed herbs as well.

I always buy the Edmonds scone mix.

In a bag like flour, sits by flour in supermarkets.

They never fail, and are yummo!!!

All you do is add water, plus you can add anything to them for savoury scones etc.

I have a good recipe, Ill hunt it out.
the trick is DO NOT OVERMIX! and your mix should be sticky! and use your hand to flaten the scones on the try or bench, the rolling pin overworks the scane mix and can make them flat, stringy and not great.
also before putting in the over brush with milk and helps make them golden
