Topic: Platters??? Anti pasto etc? Posted: 30 March 2010 at 10:07am |
Ok so we are going away this weekend, it's my job to do some platters of finger foods and the like.. Just trying to think what gets served on likes of anti-pasto platters at restaurants?
We want nice, easy finger food... Stuff you can pick at each time you walk past. It doesn't have to be pregnancy friendly. There will be at least 6 of us going away....
So far I've got on my list (I'm going shopping today):
Gherkins
Salami
Sweet chilly philly (those turn over dip things)
Various crackers (plain, shapes etc)
Cocktail onions
Couple of nice cheeses (brie, camembert? something blue? I'll find something at shop thats on special lol)
Normal chip and dip
Fancy dip for crackers, Hummus, Pesto
Bier sticks?
Peanuts
Dried fruit
What else could I get?

I do french bread slices with cream cheese and smoked salmon with a caper or with ham/salami and a sliver of sundried tomatoe etc. Maybe an olive slice. Looks really good and posh but only a little bit of the expensive stuff is used and people love it. One year I did dill lemon and garlic blitzed up like a pesto and put a drop on the salmon. Was really yum.

I did a selection of nibbles for a dinner party we went too, I pre-made mini bread cases using mini muffin tins, and filled them with couple of different fillings - mash potato, chives and grated cheese, smoked salmon and cream cheese, pesto and camembert, I also did mini scone scrolls filled with cheese and tomato pesto - they're preggy friendly.
The other options of course are to go to your local supermarket deli (a foreign place to pregnant women) and get things like sun dried tomatoes, olives, feta and mixed hams, salamis and some crackers or mini toasts to serve with them. One thing that is yummie is pepperdews - small red peppers filled with cheese yummo
Those bagel crisps are yum for antipasto platters
*sigh* only 6 months to go and I can go back to the land of yummie food.

Only buy blue cheese if you know people will actually like it, I've done this on a few occasions and no one has eaten it. Get something like Havarti or Gruyere to complement the Brie / Camembert
Cherry tomatoes are a great pop in your mouth treat too.

ooh, yum, those pepperdew things are goood!
What else... ummm...
Chargrilled veges - capsicum, mushroom, courgette, artichoke - you can buy them pre-done and marinated in jars I think.
Caper berries
Pistachios
Smoked salmon
Prosciutto
You could go retro and do cheese/pineapple or cheese/pickled onion skewers stuck in half a grapefruit

Just found out we'll probably have at least 4 maybe 6 visitors coming in and out of the holiday home, so glad I put this up! Will be nice to have some yummy stuff on offer for them!
Oh I don't have to worry about the blue cheese, my Dad eats ANYTHING... He'll enjoy it (I'll only buy something on special for him though hahahaha tight as!)
I might have to get some cream cheese and salmon, sounds like that;d go down pretty well!!! Can make them up with Mum quick enough.
Caliandjack, Could you use make them with pastry? Does the bread not go soggy? Sorry I've never made anything like that but they sound yummy! How long will the last? I'm making stuff up on Thursday to take up thursday night, so will be eating it Friday/Saturday (and sunday if anythings left!)
Sounds like I'll be spending a bit of time at the deli counter!!! I might walk back and forth, sounds like some of those things might come in jars aswell which would be super handy!!
Thanks guys... Any more ideas keep them coming!!!!

Dips like hommos, yogurt dip, pate etc. There are lots all in together in the deli section of the supermarket.
Get a nice bread like ciabatta and slice it up to have with nibbles.
Vege sticks - carrot, celery, capsicum, cucumber etc
Sun dried tomatoes, olives, pickles etc.
Make a couple of sushi rolls, slice and serve with soy sauce, pickled ginger and wasabi.
Add some dried fruit and nuts like dried figs to your platter, fresh grapes also make them attractive.
Fruit platter with a yogurt dip.

If you toast the bread first it shouldn't go soggy but pasty would work as well either savory short crust or flakey. You can also do the salmon thing with pastry just cut circles of it and bake then top with cream cheese etc I love making nibbles as they are quick and easy.
Fresh fruit like grapes/berries etc can make a good garnish and will be eaten up too. You don't need too many to brighten up the plate

Well duh I didn't think of toasting the bread That must be my smartness showing through today
Ooh baking little rounds of pasty sound like a good idea tooo!!!
And I LOVE the idea of a fruit platter with yoghurt!!!
I might have to go shopping on thursday instead to get everything fresh! Dunno if it'd still be fresh enough if I bought it today! (Plus it probably wouldn't last!)

Oh yeah you toast the bread cases - I cut out circles of bread and pop them inside mini muffins tins and bake for 10-15 mins till they're crisp - they keep in a tupperware container for at least a week. I did the same with flakey pastry. I filled them on the day I served them. Didn't last long.
I also premade the mashed potato the night before as well and filled the cases on the day and re-heated them in the oven.
You can do the same with baguette - make thin slices and toast them in the oven and top with your favourite deli toppings. Or people can help themselves. DH made himself mini sandwiches.

Mini quiches keep well in the freezer, then you just pop them in the oven when you need them:
Puff pastry rounds (about wine glass size), line mini muffin tins and fill with a mixture of egg, milk, salt n pepper and then any combo of ham, peas, corn, red pepper, spinach .... anything really but chop it up small
Bake till they puff up and turn golden
