I thought I might start a topic in anticipation of when I start cooking and freezing meals.
So girls, it is time to spill, what are your tried and true meals/recepies that never fail to go from freezer to oven (or if cakes etc defrost well)
I am sure hubby's stomach will thank you!!!

Mum made us wicked pumpkin soup in the crock pot and sent it down. I just defrosted it for dinner tonight and YUM!
Don't have a recipe on me, but I'm sure all types of soup freeze well.

Mince ! Well, bolognaise sauce if you want to be posh... hehe... but for example, if we were having spaghetti for dinner, we'd just cook "too much" of the mince sauce and then freeze the leftovers. You can get spaghetti noodles that boil in 3 mins, and then it's just a matter of zapping the mince in the microwave and ta da !

mum does care packs for the freezer once a month when she is up here...more for DH so he wont eat crap...hes 6 ft 3 and 150 kilos...!!!
She does a BIG quiche then cuts it up and freezes (good for lunches or dinners), casseroles (we leave for day to defrost and then reheat in oven), she even does sandwiches wrapped up for him in lunch sizes...great when defrosted or to panini press, and she makes a homemade vege soup too which defrosts nicely to reheat...
spoilt huh - but theres some ideas....

You can do pasta in the microwave too, just make sure it's completely covered with water.
I'm a big casserole fan. Same as Jax, just cook double and put half away. I find it best to put the half away first in case we get greedy and eat 1 1/2 meals

fish pie, shepards pie, cottage pie, bacon and egg....hel, just throw something between a couple of sheets of pastry and chuck in the freezer.

ohh you could always cook and freeze bits of meals, eg rice, pastas, veges, mince (like for a bolengaise, or for nachos) precut meats etc for stuff like casseroles
Just things that would normally take you time to prepare that way if you remember to take it out a couple of hours earlier it will be quicker for you or DH

I do twice the amount of casseroles and freeze half, too. Lasagne freezes and reheats beautifully, but I just can't understand why people say it's such a quick & easy meal to make... it takes me AGES!!! If those pre-frozen stir-fry vege mixes come on special they're worth grabbing - mightn't be a meal, but sure saves a lot of time if you want to chuck lots of veges in a dish. I'm another fan of freezing bolognaise and nacho topping - mmmmm, nachos. One day I'll have my yummy yummy nachos and beer meal again... one day! And any cakes freeze well before they're iced. I'm wondering if it's such a great idea for me to have baking stashed away though - maybe not!

I make soup from the chicken bones - boil them up and them get rid of them so I have the stock already done. I freeze it is marge containers as they are the perfect size for single serves of it to have for lunch.
My mum makes the yummiest chichen and corn cassorole and is on my list of meals that I would love to have brought round once we are at home to have for dinner.

Soups, casseroles, pasta sauces...all good.
For summer time, I guess salads etc are easy to throw together. But I have been known to make up french sticks into garlic bread and freeze - much cheaper than buying pre-made.
Muffins don't freeze too badly, but don't seem to last long once thawed - I like to just microwave them as I want to eat them. Banana cakes freeze really well.
Funny - I was just talking to DH yesterday about wanting to fill the freeezer before baby comes (nothing like planning well in advance!!).
MMMMM, I really want nachos now...

oh yeah meant to say that chocolate cake with icing freezes really well too...we put our layer of chocolate wedding cake (with butter icing layers) in freezer in slabs big enough for 2 - 3 for desserts and ate them for ages....defrosted rally well....YUMMY!!!

When Mum was here she made Moroccan Lamb using one of those Maggi sachets, bolognaise sauce, Chicken Chasseur (another Maggi special) and then just a beef dish she did in the crock pot with worcester sauce, stock etc.

Mmmm this is the hungry thread!!  I enjoy cooking so prep meals are not a huge deal for me, but after I had Hannah by emergency c/s I was extremely grateful for the prep meals some friends brought around (casseroles and banana cakes) - since I couldn't stand up for long periods and DH had no time off work.
As for baking in the freezer, you get reeaaally hungry when your milk first comes in and I'm sure you'll be grateful for all those little things tucked away!

Bombshell, we have a chocolate mud cake that is from our wedding day as well, good to hear that it freezes well as I'm looking forward to having some for luck on our anniversary!

We have frozen casseroles, almost anything with mince in it, plus we've had people bring us frozen indian meals.
What we've also found good (if you're feeling really lazy) is that we picked up the frozen tegal chicken lasagne and enchildas.
Another thing is the Signature Range version of the Kaweka meals or even the Kaweka meals themselves. We bought a few of those each of the last few shops and they have been great to have in the pantry for easy meals this past week.

I never really thought about ME eating frozen baking while b/f! Have done a whole heap of muffins for Maya's lunchbox, but I have some great dairy free recipes which will be good for me when I am on a dairy free diet to b/f.
Hmmmmm.... might get baking!

Good thread! I have spent the last couple of weeks doing cooking for the freezer here and there. Have made quiches and cut them into halves and frozen. Also casseroles, vegetarian lasagne, fish pie and vegetable frittata which I have cut into pieces. I also baked some afghans and have frozen them in a freezer bag (idea being that can pull as many as I need out prior to having people around for afternoon tea etc)
Great to read other people's ideas.
