I peel core and dice 6 green apples and simmer until stewed. Then I add a cup of sugar. I normally make mine with boysenberries or blackberries as well. I drain off 1/2 can of juice and then stir rest of can into the apples. Chuck it all in the pastry and bake for 20 mins at 180.
I actually love the edmonds recipe- I have rediscovered the cookbook and have found the recipe to be really really good. I prefer to use sweet short crust pastry for all of my sweet pies, but as I dont like sickly sweetness, I tend to reduce the amount of sugar that goes into the pie. In saying that though, I did brush the top with a mix of milk and honey with the last one I made (saturday). mmm :)
Just in case you dont have the book, here it is:
4-6 granny smith apples
1/2 c sugar
25 g melted butter
2 TB flour
1/4 tsp ground cloves (i normally use 1/2 tsp mixed spice instead)
Peel, core and slice the apples thinly. Combine sugar, butter, flour and spices. Toss apples in this mixture. Spoon the mixture into the pastry and bake 20 mins 200 or until pastry is golden.
