I try to have at least one vegetarian meal a week.

Quiche/frittata - leek and potato is current favourite
Pizza made with pita/lebanese bread, protein fillings can include canneloni or kidney beans, pine nuts, feta or blue cheese, and easy to make a meat one for those that prefer.
Stir fries - deep fried tofu or nuts or coconut milk/cream instead of meat. Could do say chicken and cashew nuts if you say he is happy to pick out meat.
Wraps made with felafel mix, could have some meat kebabs for those that prefer to make theirs with meat.
Mexican using refried beans (taco's, nachoes, burritos)
Lentil fritters - cooked lentils, flour, egg, grated veges
Nibbly night - vegetarian spring rolls and samosas in the frozen foods section, then antipasto including vege sticks, dips like hommos, nice cheeses, crackers, tasty bread, olives, sun dried tomatoes, could add pate, salami or cabanosi for meat eaters.

Soups are a good starter and could be served with a simple bread, hommos and vege platter.
Minestrone - canned tomatoes, kidney beans and veges
Curried pumpkin and lentils
Canned tomatoes, diced potato and canneloni beans
Cauliflower and potato
Carrot, lentils, tarrogan and juice and rind of one orange

Pumpkin risotto - actually most risottos! Just make sure you use a vege stock rather than beef or chicken. For the pumpkin I just use the water I boil the pumpkin in.

Otherwise Mexican is great - tacos etc with refried beans and a variety of other veges is always good.
