Does anyone have a good tomato sauce recipe? I'm more of a Whitlocks tomato chutney type of girl than Watties so anything along that sort of line would be great!
12lb tomatoes (5kg)
3lb sugar
1 oz cloves (box)
1 head garlic
1 tsp black pepper
7oz salt- NON iodised
2 large onions
1 tsp allspice
2 tsp curry powder
1 1/2 pints malt vinegar
Rougly half/quarter tomatoes, peel garlic and crush, chop onions. Put cloves and allspice into a muslin cloth. Put everything into a big pot, with muslin cloth hanging into the mix. Boil for 3 hours or until it reaches desired thickness (as long as you want really). Stir occasionally.
Heat clean glass containers in the oven. Use a Mouli on the sauce into a container then through a funnel into the warm glass containers. Leave to sit until cold, covered with a tea towel, then cover with gladwrap then a lid.
It makes a really yummy sauce and everyone who has tried it loves it! Good bottles to use are from RTD's, as the labels come off easily. I just have glad wrap over the top with a rubber band and dont worry about a lid as we use it pretty fast. Makes roughly 10 RTD size bottles (from memory). Any questions please ask, good luck.
