Hi
Next weeks job is to make my first ever birthday cake and I just wondered if any of you 'experts' out there could give me any tips.
I am making a teddy bear shaped cake. To cut it is it best to freeze it a bit first?
Has anyone tried using a packet cake mix for birthday cakes or is it too soft to cut - I was thinking of the Betty Crocker chocolate cake one. Any thoughts?

Packet mixes turn out fine I've used a basic butter-cake mix several times without any worries.

Let the cake cool down completely before cutting, then put the cut pieces into the freezer. The slight freezing (even 1 hour is enough) stops the crumbs on the cut sides going all through the icing when you start icing the cake. Also, if you chill the serving plate along with the cake it is easier to clean up icing spills because they lift straight off!

Don't use the Greens butter cake mix, it's not firm enough, but the Betty Crocker chocolate or vanilla cakes are perfect.

Really? I bought two boxes of it and both times it fell apart trying to get it out of the tin, so I decided to stop being so lazy and make some from scratch with the AWW cakebook butter cake recipe and it was fine. Bizarre!

i am making a thomas cake next week. the advice i was given was to put a white base frosting on it first - just icing sugar and water. you let that dry completely and then can add the butter icing or whatever- just means it is less likley to crumble into the icing.

i also have a great chocolate cake recipe (finally) that i have found after years of making nice LOOKING cakes thast taste like crap.

Putting the cake in the freezer for an hour or so before you ice it

p.s - I always make the cake too, I hate packet mix cakes (wouldn't really know how to make one) and can tell the difference

I hadn't even thought about crumbs going into the icing so thanks for that. - I will beware!!
