Depends if you cut them up before you cook them or after. Generally, if I cubed them beofre cooking then the cooking time would be 10 mins or less, but if I'm boiling them and then chopping then 20 min or so. Depends on the kind of potato too and how 'firm' you like your salad. Not sure if that helps... |

ive had potato salad twice since being preg - just ones ive made.
Re boiling potatoes i use the gourmet ones cause they are little and cut them in half once cooked usually boil them for about 15min i test them by jabbing a fork or knife in.

I do the same as shannon. I'll most likely still have potato salad when I'm pg (only made by me) as I think it's the fact that a lot of mayo brands have raw egg as an ingredient, which is where the danger comes in, and the brand I use doesn't.

You can have any salad made by you. You just need to watch for salads at a shop (because they sit around for ages) and raw egg white in dressings.
As for how long to cook the potatoes... it also depends on how many you are cooking. Make sure you stir them a couple of times during cooking, to keep it even, and prick a couple with a fork to test when they are ready.

Store bought mayo is fine coz it's been heat treated and contains preservatives, it's only fresh stuff made from raw egg that is a no-go. I made potato salad while I was preg but only ate it the day I made it.
To answer the OP's question, I slightly undercook my spuds so they are quite firm, they seem to continue cooking on standing, then I rinse them in cold water to cool them.
