Topic: URGENT! Mid-winter xmas dessert ideas pls Posted: 14 August 2008 at 7:30pm |
I'm going to a mid-winter xmas dinner tomorrow night and have been selected to do dessert.
Not usually a problem except with both me and Caitlin being sick all week it's totally slipped my mind and it's tomorrow night!!!!!!!!!!
Please post suggestions that take less than a hour to prep and cook (and with readily accessible ingredients) as that is all the time I'll have tomorrow after work. It's got to be fairly impressive so don't tempt me with the Cheesecake Shop or packet mixes!

All my "quick and easy" desserts are summery things like fruit kebabs lol.
What about buying a christmas pudding and doing it with brandy cream or custard?
How many people do you need to feed? Can you bake a yummy carrot cake with cream cheese icing?
Or try searching for Christmas recipes on the cuisine website www.cuisine.co.nz - they usually have some "different" things. I quite like taste.com.au as well.

how about mellopuff Xmas puds? Easy as and look good!
Take some mellopuffs and dip the top of them in melted chocolate (to make it look like custard) can be white or brown... make holly with jaffa and spearmint leaves and bobs your uncle.

hope this helps its super yummy only thing is it needs to be cooked just before serving so hope thats available. All the ingredients come from supermarket serves 6 ish
From the Jo Segar sugar and spice book
125g Butter
1/2 c white sugar
2T golden syrup
1 1/2 c flour
1 1/2 T cocoa
1/4 c rolled oats
1 1/2 t baking powder
Approx 180 g white choc (i use milkybar)
1 1/2 c frozen berries (i use the mixed ones)
Serve with yoguhrt or vanilla icecream
Directions:
Grease 24cm round pie dish or something similar preheat oven to 180 (only if serving straight after cooking)
In large saucpan melt the butter sugar and golden syrup add the flour cocoa and baking powder when mixed stir in rolled oats add the chocolade and frozen berries stir gently turn into greased dish Bake for 15 min best served warm!! Hmmm now i want some

Lemon meringue pie is pretty easy to make, especially if you buy the Irvines pastry for the base, as the recipe is on the back of the pack and I haven't failed with it yet. Looks flash too with all those peaks..

Heck, if you got cracking on it tonight you could save time tomorrow and just leave steps 6 and 7 so you're not rushing too much.. Might be good if you have never made one before cause you want to make sure you get the consistancy of the yellow part right so it will set properly..

Ambrosia!!!! So easy and so yummy.
Mix together the following (no cooking or setting required).
Yogurt of choice (we like Vanilla and Hazelnut)
300mls whipped cream
Bag of marshmellows
Frozen berries (optional)
Maltezers (crushed roughly up)
Sprinkle couple of Cadbury Flake's on top.
Done :)
Comfort dessert at its best!

Apple crumble is my desert of choice!
Peel and chop approx 2 apples for each person eating, stick them in a baking dish (can sprinkle a little sugar on top if you like things sweeter!)
In another bowl mix 200grams butter, 1 cup sugar, 1 cup flour, until it looks like crumble mix.
Pour ontop of apples, bake for approx 20 mins. Easy!

I have an even easier/lazier recipe than this. Buy two cans of pie apples. In a kitchen whizz place about 1/2 cup each of flour, rolled oats, coconut, brown sugar and butter. Pulse until mixed and put over pie apples in a suitable dish. Bake for about 30 mins in a moderate oven.

As much as I love all the suggestions... I've just found a recipe for cassata ice cream *drools*
It's really just vanilla ice cream flavoured with orange liquior with dried fruits, pistachio nuts and chopped dark choc. Nice and easy and even better, I just sent DH out to the supermarket to get the bits so I can make it tonight and leave it in the freezer over night.
I was starting to think I would need to stop off at the cheesecake shop, my big boss wouldn't have been too impressed with that for his dinner party

You could always make my choc self-saucing recipe! 5mins to prepare, 12 mins to cook in the microwave and bingo...delicious dessert! No packets required.

I have had ambrosia with pineapple lumps before. Yummy! I guess you could put almost any choccie lolly in it.

Ambrosia is wicked, and you can chop and change it to suit. The crunched up maltezers are something I thought of that now has been passed around to lots of friends.
Maltezers are so versitile, I crunch them up in a ziplock bag with a rolling pin and put it over ice cream.
Always pays to have a big bag in the cupboard (so you can eat extras whilst making dessert) if you can restrain yourself from eating them before dessert time.
Frozen berries are great too... I use fresh seasonal berries in summer, but if you are like me, you wont mind sucking on the cold boysenberries in ambrosia!
