Crunchy Fish Sticks comes from Kids’ Meals and Snacks by Emma Donnelly where recipes were chosen by children and tested by a panel of young “experts". So they're sure to be a winner at your house!
Makes 24
INGREDIENTS
3 medium potatoes, chopped
15oz (42 g) canned tuna, drained and flaked
1 egg, lightly beaten
6oz (150g/3 cups) breadcrumbs, made from stale bread
Vegetable oil, for shallow frying
METHOD
Boil or steam the potatoes until tender. Place in a bowl and mash until smooth. Add the tuna and egg and mix well to combine.
Arrange the breadcrumbs on a plate.
Take 2 Tbs of mixture, shape into a thick finger and press into the breadcrumbs to coat. Repeat with the remaining mixture.
Heat ½ in (1 cm) oil in a frying pan over a medium heat until hot, add the fish sticks and cook for 3–4 minutes on each side, or until cooked through and golden. Drain on absorbent paper, cool slightly and serve.
