Banana and berry muffins



Gluten, refined sugar and dairy free

Makes 12 medium muffins

Ingredients
4 ripe bananas
2 eggs
¾ cup dates (chopped and soaked in hot water for 15 mins)
½ cup coconut oil
2 cups rice flour
3 teaspoons baking powder
¾ teaspoon of cinnamon
1 teaspoon pure vanilla extract
¼ teaspoon salt
1-1½ cups frozen blueberries

Method
1. Preheat oven to 180°C. 
2. Place the bananas, eggs, pre-soaked dates and oil into a good quality blender and blend until a smooth consistency is reached. 
3. Place this mixture into a large bowl and gently mix through the remaining ingredients until just combined. Be careful not to over-mix.
4. Spoon the muffin mixture into 12 medium-sized muffin paper cases and place in the oven.
5. Bake for 12-15 minutes until they are golden brown.
